Agroittica Lombarda, one of the world's largest caviar producers, produces more than 24 tonnes per year, with 90% of its production exported to Germany, France and the United States, accounting for more than 15% of the global total. Agroittiaca Lombarda is now an Italian caviar giant, with two caviar brands, Calvisius and Ars Italica, all of which are sourced from farmed sturgeon in Italy, Calvisius caviar from the Agroittiaca Lombarda fishery and Ars Italica from the Storione Ticino fishery.
 
Located in the small town of Calvisiano in northern Italy, the Agroittica Lombarda fishery was one of the first sturgeon farms and caviar producers in Europe. Their sturgeon farming activities began in the 80s, when the fishery partnered with the University of California, Davis, to introduce the sturgeon (white sturgeon) for farming. In 1992, Calvisius' first product, the Tradition Royal white sturgeon caviar, was finally launched.
 
Later, when CITES restricted the trade in wild sturgeon, the demand for farmed sturgeon caviar exploded, and Calvisius' business took advantage of the fast track and developed rapidly. Today, Calvisius is still the leading brand of high-quality caviar in Europe, and its products are used by airlines such as Lufthansa and Singapore Airlines, as well as Michelin-starred restaurants and luxury hotels.
 
In addition to the aforementioned Tradition Royal white sturgeon caviar, Calvisius also sells 3 types of caviar, namely Siberian Classic, Siberian Royal and Beluga, among which Siberian Classic caviar is the most affordable, 30g is sold for only 50 euros, and the broodstock is Siberian sturgeon farmed in-house by Agrottica Lombarda. It takes 6-8 years to reach sexual maturity, the size of the eggs is between 2.5-3mm, the saltiness is obvious, and it is suitable for home kitchen use.
 
Compared with distributors such as Kaviari and Petrossian, Calvisius has an advantage at the source - the price of 30g of Beluga caviar handled by dealers is usually as high as 200 euros, while the official website price of Beluga European caviar produced by Calvisius is only 179 euros/30g, which is very cost-effective.
