Restaurant Punier is a well-known seafood restaurant in France, dating back to 1872, famous for providing fresh fish, shellfish and oysters to Paris, and is loved by political and business celebrities and members of the royal family. In 1892, with the Franco-Russian alliance, Parisians were curious and enthusiastic about distant Russia, and Russian officials held a reception at the Punier restaurant, which took the opportunity to import caviar from Russia for the first time.
In the twenties of the twentieth century, just after the end of the October Revolution, the political situation in Russia was chaotic, and all kinds of production came to a standstill, and caviar was no exception. At that time, Emile Prunier, the second generation of the Prunier family, accidentally learned that there was a wild sturgeon resource in the Gironde River in France, and in order to obtain a more stable source of caviar, Emile cooperated with caviar expert Alexander Scott to build nine sturgeon processing centers on the banks of the Gironde, Garonne and Dordogne rivers, becoming the first restaurant to serve caviar 24 hours a day, and the first restaurant in France to produce caviar in-house.
However, with the gradual scarcity of wild sturgeon resources and the tightening of the policies of international organizations such as CITES on the wild sturgeon trade, at the end of the 20th century, Prunier officially built a sturgeon breeding factory on the banks of the Gardogne River, and its own sturgeon caviar replaced wild caviar.
At Prunier's sturgeon farm, the sturgeon live in filtered water from a tributary of the Dordogne until two years later, when the sex of the sturgeon is determined – the males are processed into sturgeon-related products, and the females will continue to live there for 4-6 years until they reach sexual maturity. One week before egg retrieval, the females are transferred to a separate pond with pure groundwater, during which time the females stop eating and self-purify for egg retrieval.
In order to ensure the freshness of the roe, Prunier controls the entire process from egg retrieval to tank within 20 minutes. The large follicles taken from the female fish are divided and placed on the stainless steel screen to repeatedly knead in circles to screen out the roe particles, and then after cleaning, selecting, draining, weighing, adding salt and other steps, the roe is finally loaded into a large tank, slowly squeezed, and the air is discharged, and then matured in the cold storage for several months, and the whole process is completed.
Depending on the species of sturgeon and the amount of salt added, Prunier offers 4 regular caviar and 1 premium caviar: Tradition, St. James, Malossol, Paris and Héritage. Tradition caviar is made from Prunier's own Siberian sturgeon, which is currently the most available product on the international market. The taste of Prunier Tradition caviar is close to that of wild Sevruga caviar, with obvious hints of hazelnut and almond and a long finish; In terms of price, Tradition caviar is Prunier's most affordable product, and the 30g tin can costs 54 euros, which can be enjoyed by 2 people.
Malossol is a caviar-making process that refers to caviar that has not been over-salted, usually with a salt content of less than 5%, and was once seen as a sign of good caviar in the past. Today, the vast majority of commercially available caviar has a salt content of between 3.5 and 5%, and Malossol is no longer used as a grade, but has become a regular name. Prunier Malossol caviar roe is plump, large, dark in colour and intense in flavour, and is priced at €118/30g for those who prefer traditional Russian caviar.
