Petrossian was one of the first suppliers of caviar in France, founded in 1920 by Armenian merchants who moved from Russia to Paris, France, and the Petrossian brothers. Mouchegh Petrossian's wife comes from a fishing family with Caspian fishing rights, and has excellent knowledge of the sturgeon business and caviar-making skills.
 
Around the same time as Prunier, Petrossian started his own caviar business. At that time, the down-and-out Russian aristocrats who had fled their homeland and come to Paris as a result of the October Revolution often held feasts all night to remember the extravagant life of the past. Under these circumstances, the Petrossian brothers targeted the caviar market and successfully introduced Russian wild caviar to Paris after negotiating with the Russian foreign trade department.
 
With the help of the Petrossian brothers' unrivalled marketing, the target audience of caviar expanded from the Russian widow to the new wealthy class in Paris, and those French who could not accept caviar gradually fell in love with this salty and fresh taste of the sea under Petrossian's education - tasting wild caviar from the Caspian Sea and talking about the romance of the Russian court became the trend of French high society at that time.
 
Taking advantage of the rise of luxury dining, Petrossian also began to offer other specialties in the 30s, such as smoked salmon. Petrossian does not produce caviar, but obtains caviar from global suppliers – in the past, they only sold three traditional wild caviars from the Caspian Sea, but now that wild sturgeon can no longer be relied on, Petrossian has to select high-quality caviar from major sturgeon farms around the world, including China, Italy, France, the United States and Germany, and buy it back and sell it on an OEM basis.
 
Petrossian classifies caviar into 5 grades, from low to high quality Classic, Royal, Tsar Imperial, President and Special Reserve, and offers Caviar from Shassetra Sturgeon, Baika Siberian Sturgeon, Ossetra Russian Sturgeon, Transmontanus White Sturgeon, Kaluga Huso Hybrid, and Kaluga Huso Hybrid.
 
The Classic Caviar is a reimagining of Petrossian's 20s product in a rough style, and the Classic Shassetra sturgeon caviar is the most affordable, with a price tag of $63/30g, which is especially suitable for parties and is a great choice for the inexperienced to try caviar for the first time. If you're on a more budget, the Royal caviar is also a great place to start.
 
The Prsident range offers two grades of Russian sturgeon caviar – Alverta President caviar and Ossetra President caviar – priced at $139 and $246 respectively for 30g. Petrossian recommends using these two caviars for special occasions such as anniversaries, anniversaries, especially the Ossetra President caviar, whose eggs are taken from a cross between Dab's and Shi's sturgeon, and is considered to be the closest in flavor to Beluga European caviar, with large, shiny eggs and a mild, buttery flavor.
