Preserve is a type of jam that retains the whole pulp, and the flesh is particularly prominent, and although the taste is not as smooth, it caters to those who like to chew the real flesh. Among the many flavours in this category, cherry jam and wild blueberry jam are the most popular, with a crystal-thick sauce and a chewy chunk of flesh.
