Founded in 1891, Echire is a well-known French premium fermented butter brand, produced in the Charente region, the world's top butter producing region, and has AOP certification (Statutory Protection of Designation of Origin). It is said to be one of the best butters in the world, using only fresh milk produced daily by the cows raised by about 60 members of the dairy cooperative of Echire, within 60 kilometers of the town of Echire.
 
The fertile land of Echire is a warm and humid climate, with abundant water and plants, and the fresh milk produced by the local cows is particularly fragrant. Echire uses traditional teak barrels to whisk the cream to give the butter a unique texture and a natural woody aroma; Natural yeast is added to ferment and mature for 18 hours to create a full-bodied, creamy and smooth mouthfeel. The fermented and aged butter is rinsed with natural spring water to produce a higher purity butter, which is then blended with sea salt from the French seaside city of La Rochelle to create a rich and pure flavor. Each kilogram of Echire butter requires 22 litres of fresh milk, which is very precious.
 
Echire's butter is handmade, produced in small quantities, and has a relatively simple product line, which is mainly divided into unsalted butter and salted butter, in addition to a butter with seaweed, but it is only sold at Easter and Christmas.
 
However, Echire's products come in a variety of packaging sizes, offering a wider range of options than other brands. Echire's butter is available in three packages: 100g/125g/250g in blocks, 250g/5kg in barrels, and 20g/30g/50g in small packets, which are suitable for dosage control and storage. The price of Echire is also relatively expensive, the price per 250g is about 60 yuan, but it is still much easier to start than Bordier, AOP certification with high-level handmade, it is worth a try.
 
Echire's butter is mainly sold in French dairy retail stores and in its two own stores. If you can't go to France to pick and buy it yourself, some imported supermarkets in Hong Kong, Macau, and Taiwan can also sell it (Ash is its Taiwanese translation). However, the shelf life of Echire butter is only 60 days, and it needs to be refrigerated. In addition, Echire has opened two stores in Tokyo and Osaka, Japan, specializing in fresh butter that is flown in every day, as well as pastries and ice cream made with butter.
