Opened in 1983, the White Swan Hotel is the first five-star hotel in China, managed by Fok Ying Tung Investment and a member of LHW (Leading World Hotel Group). In its more than 30 years of operation, White Swan has hosted heads of state and government from more than 40 countries, including Elizabeth二世、德国总理施罗德、美国前总统尼克松、布什等人,邓小平曾三次下榻于此,美食家蔡澜对白天鹅评价也颇高。 白天鹅里的中餐厅有两家,二楼的国宴厅宏图府及三楼的宴会厅玉堂春暖。玉堂春暖曾入选Food&Wine杂志2016中国50佳餐厅,被中国饭店协会授予的2017年度十佳特色餐厅称号。目前中餐部的总厨是梁建宇,他从事烹饪行业已近30年,曾参加过各种国内外的活动,接待过德国总理施罗德、菲律宾总统阿罗约夫人、巴基斯坦总统穆沙拉夫等多位贵宾。 玉堂春暖的出品一直保持高水准,每一道菜都是精品。White-cut sunflower chicken不可不尝,说它是Guangzhou白切鸡的标杆绝非过誉。葵花鸡来自南沙百万葵园,丽思卡尔顿、君悦酒店等五星级酒店都选用这种葵花鸡,是诸多食家一致认可的极品。另外,白天鹅的名菜White brine palm wings, salt-baked lemongrass pigeon, four treasures of fresh solan, braised sea cucumber with green onion等也都值得推荐。 白天鹅会定期邀请名厨到店,举办特色美食节,以保持餐饮多样化。还可根据客人的要求,做菜单以外的菜式,只要能做出来,都会尽量满足客人的要求。 白天鹅从2012年起停业装修三年之久,直到2015年才重新开业。重新开张后的白天鹅保留了标志性的“故乡水”,小桥流水、亭台楼榭相映成趣。三楼的玉堂春暖以厢房为主,古色古香的满洲窗、雅致大方的的雕花椅、餐桌上的紫色蝴蝶兰、碧玉簪头筷子、汝窑茶壶,每一处细节都透露出用心,雍容华贵的气质尽显。其中“海晏楼”包厢低消五千元,在此能把白鹅潭尽收眼底,黄昏后还能看见灯火通明的游船。 谈及服务,白天鹅也表现不错,年轻服务员穿着雅致的旗袍,与环境搭配相得益彰。服务亲切周到,有求必应,添水换碟及时,加收15%的服务费及税费。到此就餐能免费停车三小时,但后门停车位很少,正门二楼停车位比较充裕。

White-cut sunflower chicken
The chicken skin is crispy, the chicken bones are fine and soft, in addition to feeling the tenderness and sweetness of the chicken, tight and elastic teeth, and the sweet chicken fat that seeps out between the bones and meat, the chicken breast is also rare and smooth.
Roast suckling pig in an open oven
The crispy red skin is sparkling and salivating. Pair it with sweet sauce or yellow mustard to experience the difference between the two flavors.
Lemongrass baked pigeon
The blast oven temperature gratin makes the whole pigeon golden brown and shiny and attractive. The rich lemongrass juice is the key to this dish, and when tasted, the pigeon's bones are full of rich lemongrass flavor, which leaves a fragrant taste on the fingertips and a long aftertaste.
