Opened in 1983, the White Swan Hotel is the first five-star hotel in China, and is invested and managed by Fok Ying Tung, a member of LHW. In the more than 30 years of its business, White Swan has hosted heads of state and government from more than 40 countries, including Elizabeth II, German Chancellor Gerhard Schroeder, former US President Richard Nixon, Bush, Deng Xiaoping has stayed here three times, and Cai Lan has also publicly stated that White Swan is his favorite Guangzhou morning tea restaurant.
白天鹅里的中餐厅有两家,二楼的国宴厅宏图府及三楼的宴会厅玉堂春暖。玉堂春暖曾入选Food&Wine杂志2016中国50佳餐厅,被中国饭点协会授予2017年度十佳特色餐厅称号。目前中餐部的总厨是梁建宇,两家餐厅的茶点一模一样,唯一的区别是宏图府不设饭市,但中午有部分小炒热菜供应。

The menu is updated every 1~3 months, and the most popular refreshments are kept and new snacks are introduced. Although there are not many types of white swan dim sum, they are all classic. Yangcheng shrimp dumplings, olive nuts and sakima, and puff pastry barbecued pork buns are the three specialty dim sum of White Swan. Yangcheng shrimp dumplings are served with whole shrimp, and the filled shrimp can be seen from the crystal skin, the pleats are clear and smooth, and the taste is smooth but not sticky. The olive kernel is very fluffy, and the appearance is wrapped in syrup, sugar gum and olive kernel, and the sweetness is just right, not greasy. The appearance of the puff pastry barbecued pork bun is an ordinary pineapple bun, and when you tear it open, it is a full and salty barbecued pork filling, which is surprising.
Anchovy taro corner and hometown saltwater corner are enough to reflect the profound skills of the dim sum chef. It is a test of the heat to make anchovy taro horns, requiring the oil temperature to be kept between 120 °C and 130 °C, the oil temperature is too low or too high to get up the honeycomb, and the dryness and wetness of the taro filling should also be properly handled. The fried Xiangxian Corner is covered with uniform and fine "pearl grains" on the outer skin, that is, small bubbles that protrude like pearls, the skin is thin and crispy on the outside, and the inside is soft and glutinous, so it is called the fire to arrive at home.
The ability of the white swan to innovate should not be underestimated. Dim sum such as crab roe, shark fin fragrant Qian dumplings, steamed siu mai with truffle, and swan cake with chestnut mushroom have added innovative elements, which not only retain the traditional deliciousness, but also have a new beauty and taste. And its rice noodles are also very different, with new sauerkraut fish rice rolls, quinoa leek shrimp intestines, and scallop rice rolls, so that customers can taste more flavors.
White Swan was closed for renovation in 2012, but reopened in 2015. The reopened White Swan retains the iconic "hometown water", with small bridges and flowing water, pavilions and pavilions contrasting with each other. The spring warmth of the jade hall on the third floor is dominated by the wing room, with antique Manchurian windows, elegant and generous carved chairs, purple phalaenopsis on the dining table, jasper hairpin chopsticks, Ru kiln teapot, every detail reveals exquisite intentions, showing a graceful and luxurious temperament. The Hongtu Mansion on the second floor is a large banquet hall, without a private room, and a row of floor-to-ceiling glass by the window, where you can enjoy the beautiful scenery of the White Goose Pond.
When it comes to service, the service of White Swan is good, but it is not up to the international five-star hotel level. The young waiters wore elegant cheongsams that complemented the environment. The service is cordial and thoughtful, responsive, and timely for adding water and changing dishes. Hongtu Mansion is open daily from 7:30 to 15:00, the restaurant does not accept reservations, and reservations can be given to White Swan Hotel guests. There are many customers who drink morning tea on Saturdays and Sundays, so it is recommended to go to the restaurant at a staggered time. Yutang Chunnuan opens the dinner market at 11:30 on weekdays, and only on Saturdays and Sundays there is morning tea, from 8 to 3 pm. You can park for free for three hours here, but there are few parking spaces at the back entrance, and there are more parking spaces on the second floor of the main entrance.
