In Chongqing, when it comes to small noodles, you can't avoid this old lady of Qinyun. In 1994, Mrs. Liao set up a stall to sell noodles in the family area of the construction factory in Jiulongpo, which was well received for its outstanding quality, and diners spontaneously named this bowl of noodles Old Woman's Stall. In 2010, Mrs. Liao's son Qin Yunzi inherited his mother's business, and the old woman's stall continued to grow, opening up and recruiting apprentices, and over the years has trained more than 1,000 small noodle apprentices, making the old woman's stall become the "Whampoa Military Academy" in Chongqing's small noodle industry.
The bowl of old woman's stall noodles on "A Bite of China" impressed many diners with its spicy and fragrant taste. Like most noodle restaurants in Chongqing, they use more than a dozen spices to make the base, but with a much more careful mind, it takes two hours to stir-fry the chili peppers alone, compared to about half an hour on average. Beef is the specialty of the stall noodles, it has a lot of pieces, the meat tendons are intertwined, the stew is delicious, and the soft texture makes it chewy at all. The mixed sauce made from the foreleg meat is also acceptable, with full aroma and salty taste.
There are nearly 100 stalls in Chongqing, and although the old site has been preserved, in a city like Chongqing, where the mountains are winding, we don't recommend diners to go for a bowl of noodles. Nowadays, the national head office of the stall noodles is opened in the MixC Food Street in Xie Jia Wan, which inherits the taste of the old store and is easier to reach. The store's signboard is conspicuous, and the words "Chongqing Top 50 Small Noodles No. 1" are also printed under the trademark to highlight its high status in the industry. The interior of the store is decorated in Chinese style, with blue and white porcelain plates and stilted floors hanging on the walls. The tables, chairs and benches are neat and clean, and the waiters are warm and thoughtful, and the movements are swift, and in this regard, the stalls are much ahead of other shops.
