Most of the small noodle restaurants in Chongqing are operated in the form of mom-and-pop shops, and this is the case with the special noodles of Changxiang Lane. This small shop is run by the owner, He Changcheng brothers, plus his wife's two sisters, and five families support a store. It has been in business for nearly 20 years and has a place in the hearts of many people as a local time-honored brand.
Xiangxiangmen is not as unique in one aspect as the top restaurants on the list, but there are no obvious shortcomings in its noodles, condiments, pea miscellaneous and other parts, which makes this bowl of noodles a little mediocre after receiving many praises, and it is not so easy to remember. The noodles are made by home, they are tough and not thick at all after the soup, and the default yellowing method also makes them more vigorous to eat. The various bases in the spicy sauce are very balanced, and the flavors of garlic oil, Sichuan pepper, and chili pepper all have the upper hand, so this bowl has a high degree of friendliness for diners with a clear mouth, but it is a little blandish in the eyes of heavy diners. The production of miscellaneous peas is also decent, the pea particles are full and not raked, the miscellaneous sauce is delicate and flavorful, and the sauce is rich. The menu in the store is much simpler than its peers, except for peas and mixed sauces, only beef is provided, and the only thing you want to pair with the noodles is braised eggs and fried eggs.
The Xiangxiang noodle shop located opposite the Niujiaotuo Junction Station is very small and has little room for anyone other than the waiter, so it is not uncommon to see many diners sitting in the aisle with stools as tables to enjoy this bowl of noodles. The service does not have much content to show, ordering, feeding, and the above in one go, less nonsense.
