The ancient method of cross-bridge rice noodles was taught by Yun Shangyun with the help of the liaison office of the Yunnan Provincial Government in Shanghai. The ancient soup base is made from more than 20 kinds of raw materials, such as old hens with more than one year of egg age, old Xuanwei ham with two years of age, pork leg bones, dried scallops and dried shrimp. In order to ensure that the chicken broth continues to boil after it is served in a bowl, the bowl used is heated in an oven at 250 degrees Celsius. Before serving the soup, white pepper, the only seasoning of the rice noodles in the bowl, is put into the bowl, and then the chicken fat is boiled in a bowl with pre-condensed chicken fat. While the essence of the ancient cross-bridge rice noodles lies in the soup base, the meat and vegetarian dishes (side dishes) used by Yun Shangyun are no less impressive, including fish fillet, shrimp, chicken, ham, black truffle, matsutake mushroom, gastrodia, chrysanthemum petals and leeks. Mr. Shen Hongfei, the general consultant of "Tip of the Tongue", praised Yun Shangyun's ancient method of cross-bridge rice noodles, and it is said that he once had two bowls in one go. Due to the cumbersome preparation of the soup base, only 50 cross-bridge rice noodles are served every day, so interested diners need to arrange their meal time.

On the basis of traditional methods, Tengchong Granny Artichoke, which has the highest order rate, is paired with secret pickled vegetables, tomatoes and more than a dozen spices, which makes the taste richer and suitable for all ages. The Pu'er prawns are also quite popular, the pu'er are stir-fried in advance, and the dishes will not have a bitter taste, and the prawns are all processed with open backs, and the shrimp meat is very delicious. Eating Yunnan cuisine must be indispensable to all kinds of mushrooms, every year in August and September, Yunshangyun will stage a mushroom feast, matsutake mushroom, chicken fir, porcini mushroom, green head mushroom, grain ripe mushroom, chanterelle and other six major mushrooms, a total of 19 kinds of dishes have been produced, the mushroom feast will last up to 2 months, then diners can come here to try fresh.
Yunshangyun Restaurant is close to Nanjing East Road subway station, and the transportation is very convenient. The environment of the restaurant is dominated by dark colors and uses spot lighting, which is very private.
