Shanghai Sutaro 巓 - Business Reviews

Shanghai Sutaro Hi is the first overseas branch of the one-Michelin-starred restaurant Sutaro in Hakata-ku, Fukuoka City, Japan. There are currently four Japanese chefs who have worked at Michelin-starred sushi restaurants in Japan, making the lineup one of the best in Shanghai. At the same time, Taro Fujii, the manager and chef of the Fukuoka Hakata main store, also visits Shanghai from time to time, and his craftsmanship is even more worth experiencing for diners.

Shanghai Sutaro Taro implements a set menu, known as omakase in Japanese, and diners only know the general process of eating appetizers, sashimi, chawan, salad, sushi, soup, and desserts, and the specific ingredients and styles are only known from the moment they are served to the table. The best way to experience OMAKASE is to sit at the counter, so that you can not only see the chef in process of making the food up close, but also communicate with him to adjust the taste and preferences of the dish for a more comfortable dining experience. Before the meal begins, the chef will routinely ask the guests if they have any taboos or special preferences, and the restaurant waiter will also act as an interpreter to introduce the dishes and help the diners communicate with the chef smoothly.

The restaurant's fresh fish is mainly sourced from Nagasaki, but high-quality domestic ingredients are also used. In addition, the insistence on homemade snacks is another manifestation of the quality assurance of Shanghai Sutaro Tsuki, and these supporting characters used to accompany the meal can also be eaten with a sense of surprise. Not only is the wasabi freshly grounded, but the ginger slices that go with the sushi are also pickled in-house, and because there is no sugar, the spicy flavor is prominent and the sour taste is pure. Homemade blueberry jam and blueberry juice are also highly recommended snacks for diners.

Shanghai Sutaro Tsu is open for lunch and dinner, and offers two sushi sets at 680 yuan/8 guan and 980 yuan/10 kan respectively; The price of the dinner package is 1380 yuan/8 guan, 1980 yuan/10 guan. The above set prices are inclusive of service charge, and there is no need to add extra charges. Drinks are not included in the course of the Sushi Taro, so diners can order them if they wish. We recommend a custom-made cloudy sake for Shanghai Sushi Taro Tsuki, which is an unfiltered sake with a milky white color and a richer rice flavor than sake.

In terms of environment, the restaurant is not large, with two floors, the first floor is only a bar, which can accommodate about ten people, and the second floor has two private rooms. The restaurant retains more elements of traditional Japanese sushi restaurants, and the screens, curtains, and tablecloths are all unique in Japanese style. The tableware in the restaurant is Karatsuyaki, which is one of the "Three Great Pottery Pieces in Japan", and the seats are ergonomically designed leather sofas for a comfortable sitting.

Located in Jianye Li, the largest existing Shikumen lane cluster in Shanghai, next to the Capella Hotel, Shanghai's only all-villa luxury hotel, the door is the same as the hotel's style, and there are no warm curtains, wooden doors and other elements that represent Japanese restaurants, so it is easy to miss.
