Laotongcheng is famous for selling tofu skin, and boasts the title of "king of tofu skin". It used to be the first breakfast shop in Hankou to sell tofu skin, and now the slightly famous bean skin shop in Wuhan has some relationship with it. There was a folk song in old Hankou that "if you don't go to Laotongcheng, you won't go to Hankou".
Lao Tong Cheng was founded in 1931, the original name of "Tong Cheng Restaurant", "Tong Cheng" means "Tong Success", after several changes changed to be renamed "Lao Tong Cheng", the last name change was because of a clerical error, so the mistake is wrong, there is now "Lao Tong City". Now, Laotongcheng is under the umbrella of Hubei Baiyunbian Group, and the industries involved in include catering, food, liquor and real estate, which is one of the few time-honored brands in Wuhan that has become bigger and stronger.
As one of the most common breakfast dishes in Wuhan, tofu skin is almost as famous as hot dry noodles. The bean skin belongs to the glutinous rice early, and its production process is to beat the rice and mung beans or soybeans into a paddle and spread the skin, add egg liquid to make the egg skin at the same time, and then spread the glutinous rice, and then sprinkle in the diced meat, shiitake mushrooms, bamboo shoots and other ingredients, turn over and cut into square pieces. Today's Laotongcheng has standardized this series of operations, and the production is very stable.
There are roughly two styles of bean skin in Wuhan, one is the traditional dried and fragrant bean skin; The other has been modified to include brine toppings. Laotongcheng is the representative of the traditional dried fragrant bean skin, which does not add any toppings and has an original flavor. In the taste of old Wuhan people, crispy on the outside and soft on the inside, salty and fragrant are the flavors that bean skin should have. There are only two types of meals in the Laotongcheng store, such as tofu skin and rice wine, of which the tofu skin usually contains three flavors: three fresh bean skins, beef bean skin and shrimp bean skin, and braised crayfish bean skin is also served in summer.
The old Tongcheng on Jiqing Street was newly opened in 2010, with a superior dining environment and excellent service, and a large number of local and foreign diners come to taste it every day. Lao Tongcheng is open from 8 o'clock every day, and because it is located in a tourist area, there are fewer diners who choose to come here too early, and the waiting time in the morning is shorter. At present, there is only one store in Jiqing Street in Wuhan, and the Laotong City in other markets has no relationship with the main store of Jiqing Street.
