In 2006, Yunnan Restaurant in the Polar Border City took root in the Gulou area of Beijing, specializing in Tengchong cuisine. Its manager comes from a family of chefs, and is the fourth generation of Yang Zixiu, a woman from Yunnan Xiqi, who was once the head of the family catering of Mr. Li Gengen, the chief minister of agriculture and commerce of the Beiyang government. polar region边城的云南菜几乎与当地口味没有差别,京城美食平台BTV《美食地图》、央广《乐活四九城》以及大小美食杂志都曾对Polar border city做过推荐。2008年,城市生活周刊<《Timeout》将Polar border city餐厅选为京城口味100佳餐厅之一。 Polar border city主营腾冲菜,腾冲位于云南西部,曾经是古代南方丝绸之路的要塞,也是自古以来的兵家重地,有“极边第一城”之称。腾冲物产丰富,并且融合了来自各地的饮食文化,这也使得腾冲菜具有油而不腻、酸辣有度、香而爽口的特点。 在Beijing吃云南菜,细心的食客会发现,招牌菜几乎都是千篇一律的汽锅鸡、黑三剁、过桥米线,特色小吃也是炸蜂蛹、炸乳扇、鲜花饼来回几样。Polar border city除了保证食材来自云南本地之外,菜式也十分丰富,菜单上每一道菜的图片和描述都值得拿来欣赏一番。除了口味地道,在Polar border city可以吃到其他云南餐厅少有的特色菜品。 大救驾是腾冲最出名的小吃之一,是云南十八怪之一,也是Polar border city的招牌菜。其菜名渊源就不在此赘述,大救驾是将大米加工制成的饵块与鸡蛋、番茄、酸菜、糟辣椒等一起翻炒,酸辣可口,非常开胃。稀豆粉也是云南名小吃,它是一种用豌豆制成的黄色糊状食物,可直接食用,也可加入酱料就着油条或饵丝一起吃,物美价廉。然而,Polar border city的稀豆粉是需要提前一天预订的,恐怕如此苛求一碗小吃的Yunnan Restaurant in Beijing也就Polar border city一家了。Polar border city制作的稀豆粉不是直接用豌豆做出的快销食品,而是用浸泡五小时以上的豌豆磨浆制作,如此做出的稀豆粉粘稠度大、豌豆的清香味浓。 还有一道极具云南特色的菜肴叫做“撒撇”,因为会用到牛小肠消化后的苦汁,而被外地人误解为一道可怕的食物。因此,大部分的北极云南菜馆都自动规避了这道菜。“撒撇”在云南是当地人习以为常的美味,没有撒撇的云南菜是不完整的。在Beijing几乎绝迹的撒撇,在Polar border city照常供应,这里的撒撇为柠檬撒,柠檬撒没有苦味,酸辣可口,被接受程度高,而另外一种也是最正宗的苦撒恐怕只有到云南当地才能品尝到了。 Polar border city开业至今,对云南菜原汁原味的坚持得到了不少喜爱地道云南口味食客的青睐,从最初鼓楼附近的一家小店,发展到如今拥有三家店铺。在餐厅装饰上保持云南山野粗犷奔放的气质,不走文艺路线,个性十足,不可错过。
