The Salon is a special champagne brand, not with the same illustrious background as other brands, it was born only to meet the needs of the founder Aimé Salon and his family and friends. The salon's first champagne was in 1905, and it was launched in 1911, and with the encouragement of friends, Aimé Salon began commercial operations in 1920.
The Grand Cru of Le Mesnil-sur-Oger in the Côte de Blanc is one of the best Chardonnay villages in Champagne, and Cook's classic Clos du Mesnil is made from the village's grapes. Aimé Salon also recognises the Grand Cru of Le Mesnil-sur-Oger, which he believes produces the best Chardonnay champagnes, which is what makes the salon characteristic, producing only a single village, single-varietal Blanc de Blancs.
Salon Champagne is made from 100% Chardonnay, and the grapes come from the 19 plots in the Grand Cru village of Le Mesnil-sur-Oger, hand-picked by Mr. Aimé Salon, where the grapes are harvested, sorted and then pressed on site. Salon Champagne uses only the first pressed must, fermented in stainless steel vats and aged for 10 years before being released. However, the Salon only makes champagnes in the best years, not every year, and has only been around 40 for almost a century.
Salon Champagne only produces about 50,000 bottles of champagne at a time, and 95% of the product is exported to the world, so even if the scale is far less than the top champagne merchants such as Dom Pérignon, Cook and Louis Princess, the Salon is still regarded as a representative of high-end niche champagne, recognized by Champagne lovers all over the world.
From the very beginning of its creation, Champagne was managed by Monsieur Aimé Salon himself until his death in 1943. In 1988, Roland Birt Champagne acquired the salon, and today Salon Champagne and its neighbour, Dlomont, are managed by Didier Depond, and the grapes from that year's harvest are used to make Délomont Champagne in years that are not eligible to make Salon Champagne.
