Xiaolongkan is undoubtedly the Chengdu hot pot with the most fierce development momentum in recent years, and it is also the biggest contributor to bringing Chengdu hot pot to the whole country. Its founding store opened in 2014 in Shuinianhe, nearly one and a half years later than Dalongyi, but the expansion rate has caught up, and more than 600 stores have been opened across the country in four years.
The founder, Wu Dong, had more than 20 years of catering experience before founding Xiaolongkan, and the hot pot and skewers were opened and closed several times. In 2018, Xiaolongkan stores were exposed to the recycling of hot pot oil, the recycling of guest leftovers, the sour meat brushed with pig blood, and the kitchen hygiene was worried. After the sanitation incident, the head office has asked all branches to install monitoring equipment in the kitchen, and promised to manage the use of base oil and base materials in the stores, but the specific implementation results are not yet known.
Xiaolongkan has a total of 13 directly operated stores in Chengdu, which are managed by the head office. The environment of the store is the same, there are many red lanterns hanging in the lobby, the ancient Eight Immortals table is well placed, the lights are bright, and the whole looks bustling and lively. The service staff of the restaurant have been uniformly trained, and the standard of guidance, ordering, serving, and withdrawal is standardized, but when the customer flow is large, the service attitude will inevitably decline. The dining atmosphere of each branch is relatively noisy, and during the holidays, the average waiting time for the Chunxi Road store, concept store, memorial store, and Yanshikou store is 2-3 hours.
