Kaiseki Den by Aotome is one of the high-end restaurants owned by Hong Kong business celebrity Lam Kin Ngok's Lai Sun Restaurant Group, formerly known as Wagyu Kaiseki Den. Due to the increase in the rent of the original store, the restaurant found a new location and changed its name to Kaiseki Den by Saotome. The store is also on the Michelin star list, and although there is little publicity, it is quite popular.
The chef of Kaiseki Den by Saotome is Hiroyuki Mayo, and Saotome's name comes from the chef's surname. Maywoman Hiroyuki was one of the first Japanese chefs to settle in Hong Kong, and it was they who gradually accustomed local diners to the no-menu format of high-end Japanese restaurants, forming the now widely recognized "chef-made" system. Maywoman Hiroyuki has worked for Kubei, a well-known sushi restaurant in Tokyo, for more than 10 years, and also served as the sushi chef at NOBU restaurant in London, and has a lot of chef experience. He is known for his multi-national blend of traditional and culinary ingredients, and he is adept at presenting a variety of ingredients through exquisite plating.
Kaiseki Den by Aotome is only available for dinner, and is closed on Sundays. The kaiseki set menu starts at HKD2080 per person and consists of 10 dishes. The kaiseki chef here has a personal style that caters to the dietary preferences of local diners, and he is not shy about using precious ingredients, such as Kobe beef, which is one of the restaurant's signature top-notch ingredients. Prior to 2012, Hong Kong banned the import of Japanese beef, so it was almost impossible to eat Kobe beef in the past. Nowadays, you can taste the top Wagyu beef in Hong Kong, and many old people go to try it from time to time.
Kaiseki Den by Aotome can accommodate up to 30 guests, and the open kitchen design allows diners to see the dynamics of the kitchen at a glance. The interior of the restaurant is mainly decorated in light wood color, which is simple and fresh. Dining seats include eight seats at the bar, as well as regular tables and private dining rooms to meet the needs of different diners.
