Born in Osaka, Japan, the head chef of Kashiwaya in Hong Kong, Jun Takahashi has been working at Kashiboya for nearly 30 years since he started learning to cook. Before coming to Kashiwaya, Hong Kong, Jun Takahashi worked as a sous chef at the Osaka main restaurant. Kashiwaya Hong Kong currently has three Japanese chefs to ensure the traditional and pure kaiseki. Kashiwa House Hong Kong is full of sincerity, and the chef is in charge of the whole business hours, even during the lunch set at a lower price, and the chef prepares it himself. In many Japanese restaurants in the mainland that claim to be Japanese chefs, Japanese chefs generally only serve customers in the evening market, while the lunch market is made by the deputy or other chefs, and there is a big gap in the production. Chef Kashiwaya always pays attention to the dynamics of diners when preparing dishes, and the rhythm of serving dishes is methodical, and the dining experience is smooth and comfortable.
Kashiwaya has nine to eleven dishes such as appetizers, soups, sashimi, eight inches, kimono, bowls, rice, Japanese sweets, desserts, etc., each of which is close to the season and is flown in from Japan every day, with high quality and freshness. Tableware and plate decorations can make diners feel the strong seasonality. The menu is made of Japanese washi paper, written in both Japanese and English, and the menu is named after traditional Japanese sayings for the month, such as "Suino Month" in June, "Bunyue" in July, and "Hazuki" in August. For example, the best taste of cuttlefish is in the middle, so in order to make the tip of the tongue touch the middle of the cuttlefish more, the surface needs to be finely cut to expose more of the middle of the cuttlefish.
