Founded in 2004 in Nishiazabu, Tokyo, La Bombance, a new Japanese restaurant founded by Japanese celebrity chef Okamoto Nobu and is the reigning Michelin-starred restaurant in Tokyo, and has no shortage of celebrity frequents. In 2016, La Bombance settled in Causeway Bay, Hong Kong, and has been attracting attention since its opening.

Nobu Okamoto is the founder and head chef of La Bombance and is well-known in the Japanese dining scene. Born into a family of chefs whose father ran a traditional sushi restaurant, Okamoto grew up with traditional Japanese cuisine and later dabbled in French cuisine, where he studied French cuisine deeply. Okamoto also worked at the "Fukudaya", the royal restaurant of Japanese dignitaries, and his cooking skills were highly recognized. Nobu Okamoto's food perspective is unique and avant-garde, and his dietary philosophy is that "with solid basic skills, it is necessary to integrate changes into them and achieve balance, and to take good taste as the greatest principle". The chef of La Bombance in Hong Kong is a protégé of Nobu Okamoto, who visits the restaurant in Hong Kong from time to time.

La Bombance's menu is a blend of Japanese cuisine with the essence of French cuisine, with both presentation and presentation leaning towards the Japanese style. La Bombance's menu is extremely obsessed with temperature: "hot must be hot, cold enough". La Bombance uses seasonal fresh ingredients, changes its menu once a month, and combines French and Japanese dishes, such as Japanese rice with black truffles, which is commonly used in French cuisine, and Kagoshima Wagyu beef is cooked in the French way. La Bombance Hong Kong is designed in a traditional Japanese style, with a light box at the entrance that evokes a strong Japanese atmosphere before you even enter the store, and a white wooden counter in the restaurant, where the chef and diners interact closely, creating a harmonious atmosphere. Reservations and deposits are required prior to dining at La Bombance, reservations can be made up to two months in advance, children under 11 years old are not allowed, and there is a charge for bringing your own drinks and cakes.
