In 2017, the Japanese ramen restaurant "Tsuta", which opened two branches in Hong Kong, has attracted much attention. In 2015, Tsuta Japan became the first ramen shop to be listed in the Michelin Guide Japan. Tsuta's popularity is so hot that it once set a record for the longest queue of 5 hours at the head office in Japan. At the beginning of the opening of the Hong Kong store, it was not surprising that there was a long queue in front of the store, which shows its popularity.

Tsuta Ramen is meticulous in its attention to detail, focusing on soup base, noodle making, and cooking. Tsuta's ramen is handmade, and the soup base is made with fresh ingredients, no MSG added, and the umami flavor is pure. The key to Tsuta's ramen success is soy sauce, which is brewed from whole plump soybeans and matured in cedar barrels for two years before being used. Unlike the rich tonkotsu ramen soup base, Tsuta's soup base is made from chicken, pork knuckles, kelp, dried saury, clams, shiitake mushrooms, etc. Miso ramen is a limited edition of Tsuta Hong Kong. Made with Tokushima Prefecture Hatcho miso, brewed with 100% pure soybeans, faithful to the original taste, and no MSG is used. The flavor of miso ramen is heavy on soy sauce ramen, with just the right amount of sweetness and saltiness, and a strong soybean aroma.

Tsuta Hong Kong is located on Tenlong Street in Causeway Bay and Tsim Sha Tsui Harbour City, both in the heart of Hong Kong. The decoration style of the Tsuta restaurant is slightly luxurious, and while following the simplicity of the "Tsuta" Japanese store, the original wood elements are added to the glass door design, which is quite stylish. The restaurant's open kitchen also allows diners to see the entire process of making ramen.
