Founded in 1993, Fengyu Shengfang is a long-established state-run dim sum restaurant and has been awarded the titles of "Chinese Famous Snack" and "Chinese Famous Restaurant" by the China Cuisine Association.
At present, Fengyu has more than 10 directly operated stores in Shanghai and its own distribution center. The operating model is quite similar to that of Xiao Yang Shengfang, where the fillings are distributed to each store by the distribution center. However, because the dough is made in a semi-fermented mode, it requires a high level of experience from the chef, so the quality of the fried pancakes produced at each store is uneven. In the early years, Fengyu Raw Fried on South Shaanxi Road was the most popular among many stores, and a single pot of raw fried fried food was sold out within minutes. Leslie Cheung used to be a customer of this store. However, with the relocation of the municipal government, the store has changed its location.
Fengyu raw fried has a good appearance, the shape is round, and it looks white and fat. The fried dough is thick, and it tastes a little soft with buns, but it is not lacking in toughness. The meat filling is firm, tender and chewy. The soup is a typical water-derived frying, the amount is very small, and there will be no splashing sensation like the small poplar raw frying. The soup is fresh and sweet, and it is obviously Shanghainese. The opening of the pan-fried is facing downward, and the folds are golden brown and slightly charred. The abundance of fried sesame seeds and green onions is pitiful, which is also often criticized by diners.
Although the level of abundance is often complained about by diners, there is still a large flow of people in each store. In order to increase the turnover rate, the waiter will be extra diligent when collecting the plate, and may take advantage of the gap between you to buy paper towels to collect the unfinished meal.
