The Italian restaurant at the R&F Carlton Hotel Guangzhou is much more low-key than Yizhen and Yue Xuan, but in the Italian cuisine of Guangzhou, the strength of Yixuan restaurant is enough to rank among the top three. The current chef of Yi Xuan Restaurant, Andrea, has been taught by Italy's first three-Michelin-starred chef Gualtiero Marchesi, two-star chef Oliver Glowing, one-star chef Luca Marchini, and has also served as sous chef at the three-Michelin-starred restaurant 81/2 Otto e Mezzo BOMBANA in Hong Kong. Chef Andrea's Italian cuisine adds a sophisticated plating that subverts the misconception that Italian dishes are only pizza and pasta. This, combined with the regularly changing menu, also allows the restaurant to stay fresh for a long time. Inspired by the Italian Vercaisia, it is rich in taste, with an infinitely crispy crust, sweet and smooth mascani cheese, authentic Parma ham, and a rich aroma of black truffle. It is a well-deserved classic delicacy of Yixuan.
