Aromatic liquor is divided into Sichuan (Sichuan region) and Jianghuai (Anhui, Suzhou, Shandong, Henan). Sichuan-style strong aroma liquor, strong aroma, sensory highlight rich grain aroma, cellar bottom aroma and aged aroma, there is a compound aroma of grain and grain mixed with dregs after cooking, but the liquor body is very clean, no evil miscellaneous taste, mellow taste, and the style is enthusiastic and unrestrained. The Jianghuai school has a strong aroma liquor, the aroma is more elegant, and the taste is more delicate and soft, so the Jianghuai school has the saying of "light and elegant fragrance". Among the Jianghuai faction, the most famous is Yanghe wine.
Yanghe wine is produced in Yanghe Town, Suqian, Jiangsu, and its winemaking history can be traced back to the Sui and Tang dynasties. In 1979, Yanghe Daqu was rated as one of the eight famous liquors in China, and since then it has been awarded the title of national well-known trademark. Yanghe was once left behind by other famous liquors, until 2003, when the Blue Classic series was launched, and with excellent marketing and excellent quality, it fought a beautiful turnaround - Blue Classic not only became the representative of Mianjiu liquor, but also recognized as a well-known trademark in China, and Yanghe rarely owned two well-known trademarks in China. In 2017, Yanghe performed well in the mid-range and high-end markets, sharing 80% of the profits of the liquor industry with Moutai and Wuliangye.
Yanghe liquor uses sorghum, rice, glutinous rice as raw materials, and high-temperature koji made of wheat, barley, and peas as the starter agent. The core process of "low-temperature cellaring, low-temperature fermentation, and low-temperature distillation" makes the finished liquor have the characteristics of soft taste and mild aroma, and even new liquor will not be fragrant and spicy - unlike the impression that Baijiu has always given people, Yanghe Liquor has no stimulating spicy taste, so it has created a new category of "soft liquor". In 2008, "soft type", as a unique type of liquor, was written into the national standard.
Yanghe Liquor only produces high-grade liquor, with an alcohol content of 42%, 45% and 52%. The brand's flagship blue classic series, including sea blue, sky blue, and dream blue, corresponds to the middle and low range, middle and high-end respectively. Among the three sub-series, Sea Blue is relatively flavorful and easy to get on the head, Sky Blue is medium and medium-distance, and excessive drinking will not cause hangovers, and Dream Blue performs the best. Taking Dream Blue M1, which has an alcohol content of 45%, as an example, when the wine is first poured, it exudes a refreshing and elegant aroma, and the hanging cup presents a thin curtain-shaped, medium body, clear and transparent; The wine is soft and mellow in the mouth, with a subtle spicy taste in the sweetness, rich in aroma in the mouth, and the irritation of the alcohol in the throat is slowly enhanced, but not much. The price of this wine is about 360 yuan, which is relatively cost-effective high-end liquor.
