One day in 1865, when the Hennessy family (Maurice Hennessy) was bored, he occasionally saw a star on the edge of the frame, which triggered the idea that he might as well add this star to the brandy bottle, and later put into practice, dividing the concept of Hennessy cognac into one, two and three stars, making it easier for customers to distinguish the quality of cognac, and became the founder of three-star cognac.
The legend of the founding of the decanter
When it comes to decanters, it's impossible to forget Hennessy's contribution. Prior to 1830, all brandy products were sold in wooden barrels, which were not discernible to customers as there were no labels on the surface of the barrels indicating the origin, manufacturer and quality. Seeing this, Maurice Hennessy changed this confusion by designing cognacs in glass bottles, limited to the higher quality wines (now known as the XO category), with labelling on the bottles, so that customers could clearly distinguish the best wines. In 1830, when wine was first transported by ship to other cities, and in 1858, the use of wine bottles became more common.

In 1870, according to the instructions of Maurice Hennessy, the cellar master used the oldest and finest 'eaux-de-vie' to produce a full-bodied Grand Cru that for the first ten years was reserved for family or friends. In 1888, there was an official record of the sale of XO grade brandy in France, and in 1900, the Hennessy Distillery officially registered the XO grade with the French government, so that all future brandies with the same characteristics must be called XO. With the exceptional quality of Hennessy's mellow aroma, Hennessy XO is quickly recognized as the benchmark for the finest cognac, and is highly respected by its peers. Today, even though there are many cognac products that claim to be XOs flood the market, the only one that is truly XO is Hennessy XO. Efficient production
Hennessy has 500 hectares of vineyards and 28 distilleries, but these are not enough to meet Hennessy's needs, so more than 20 vineyards have signed contracts with Hennessy to supply it with their grapes. In addition, Hennessy also purchases the distilled spirits from other distillers. All of these distilled spirits are packed in oak barrels from Satoyama and placed in the basements of Hennessy's 25 locations. As a result, the company has 180,000 barrels of raw liquor, the highest production volume in the brewing industry. In order to maintain a high level of production, Hennessy mainly harvests the grapes mechanically, while the rest is harvested by hand.
Catering to market needs
In the 80s of the 20th century, as of 1980, Hennessy sold about 130 million bottles of brandy worldwide every year. In order to maintain Hennessy's leading position, in addition to using the best grapes from the grape region, they divided the brandy into 19 or 20 different ages in different cognac regions for each wine-producing area, according to the quality and grade of the wine.
The quality and taste of cognac are also different in each exporting city, for example, in Asia, Hong Kong and China, for example, they all prefer the sweeter taste of brandy. In order to meet the needs of the market, each country is exported to a different flavor.
