Ichimatsukyo Cuisine / Ichimatsu Kaiseki Cuisine - Merchant Reviews

The Japanese food in Xi'an may be able to change your impression of inland cities.

As a central city in Northwest China, Xi'an has developed rapidly in the past two years, and the spending power of local consumers has been continuously improved. At the same time, as a popular tourist city, Xi'an is receiving increasing tourist volume. With that comes the urgent need for high-end dining. Xi'an's mid-to-high-end Japanese restaurants have appeared since 2015, and nearly half of the restaurants on the list opened in 2018.

Yisong can be called the most high-end Japanese food brand in Xi'an. In 2012, he started as an izakaya called Sakuracho, and in 2015, he started Ichimatsu Kaiseki Ryori, introducing kaiseki cuisine to Xi'an. In 2017, Ichimatsukyo Cuisine opened, and compared with Ichimatsu Kaiseki Cuisine, the restaurant decoration, the selection of ingredients, and the per capita consumption are all on a higher level.

Ichimatsu's founder, Yin Gang, studied in Japan, working at an izakaya in Osaka and learning cooking with his boss Eiji Tajima before returning to his hometown of Xi'an to open a restaurant. In order to increase brand awareness, Ichimatsu has also invited well-known Japanese chefs in the industry to serve as chefs, but there are currently no Japanese chefs in Ichimatsu's stores.

Today, Yisong's restaurants have a high reputation and popularity in Xi'an. There are two high-end restaurants in the same one song, one is called Kyoto Cuisine and the other is Kaiseki Cuisine. From the perspective of the interpretation of the term, "Kyoto cuisine" refers to cuisine from Kyoto, Japan, which combines various forms of Japanese cuisine, such as vocational cuisine, shojin cuisine, kaiseki cuisine, and family cuisine, and uses seasonal ingredients as cooking ingredients, and is extremely particular about the presentation, and its status is even higher than that of kaiseki cuisine. Therefore, the simplest and most crude way to distinguish between the two restaurants is per capita consumption, and the per capita consumption of Ichimatsukyo cuisine is higher than that of Ichimatsu kaiseki cuisine.

There is no strict reservation system for eating Japanese food in Yisong, and there is no ordering mode of "only for set menus and no à la carte", and the business mode is more suitable for local diners to walk in and order dining habits. Therefore, instead of choosing a set meal directly, we recommend diners to go a la carte with their own pairing.

Seasonal Japanese representative ingredients are rarely missed at Ichimatsu. Autumn is the best time to eat saury. In autumn, the fish that looks like a knife is called "saury". The saury, which is thin and thin, and the cheap commoner enters September, with more meat and fat, and its value has skyrocketed. The saury sashimi can be salt-grilled, grilled, and sashimi, and the saury sashimi must be eaten with green onions and garlic, which can not only remove the fishiness, but also bring out the umami. In addition, there are also "ruby in the sea" Jinji fish, "king of 100 fish" pufferfish, "essence of the sea" sea urchin, etc., whose freshness and quality can reach the level of high-end seafood restaurants in coastal cities, and it is indeed surprising to encounter such a wealth of sea treasures in inland cities.

Yisong Kaiseki Restaurant is located on Shuncheng South Road, Nanma Road, close to the old city wall of Xi'an, and is an independent shop. The first floor is a bar counter and a regular dining table, and the basement floor is a private room. The décor is traditional and Japanese, and it is very elegant. Located on the fifth floor of the high-end shopping mall Zhongda International, the interior landscape is extremely exquisite, with gravel, stone slabs and corridors giving people a sense of winding paths. Both of them have a high-grade reception capacity and are an excellent choice for high-end banquets in Xi'an.
