Like the three no's, Qihua is also a local brand in Xi'an. The three do not win with the bottom of the pot, and Qihua hot pot has made a name for itself with high-quality dishes. The hot dishes in the store are produced with great care, and the quality, freshness and richness of the ingredients are excellent. The handling of the restaurant is also not sloppy, the meat ingredients are neatly changed, the shape and size of the ingredients are close to uniform, and the offal dishes are carefully cleaned without any peculiar smell.
The quality of beef is particularly outstanding, with nearly 10 dishes such as spicy beef, beef tongue, upper brain, and eye meat. The upper brain is located at the back of the shoulder and neck, from the head of the neck to the front of the spine (eye meat), which is low in fat and high in protein, and the meat is tender and lean. The store serves F-topphalt and max-brain, the difference is that F-max-brain is made of bovine spine brain, and the quality is slightly inferior to the latter. The eye meat comes from the middle part of the upper brain and loin, the fat content is higher than that of the upper brain, with obvious marbling, and the oil aroma and juice are more abundant than the upper brain meat.
The hot pot hairy belly has not been changed in any way, and it is directly torn off from the leaf petal and then put on the table. Although the shape is uneven, the area of the leaves that are retained is far larger than the hairy tripe of other merchants, and it is quite enjoyable to eat. There are two types of yellow throat, pig yellow throat and bezoar throat, both of which are fresher in quality, but the difference is that the latter has a thicker texture and a more crisp taste. Yellow throat is often mistaken for an animal's throat because of its word for "larynx", when in fact it is a large artery located in the ventricles. Shunan bamboo shoots are also Qihua's sincere dishes, which are difficult to see in other hot pot restaurants in Xi'an. Bamboo shoots are purchased from Shunan Zhuhai and Chashan Zhuhai, and the shop first smokes and dries them with firewood and then soak them in water, the color is dark yellow, fresh and crisp and has an obvious smoky taste.
Kai Wah has a wide variety of hot dishes, and the restaurant is intimate enough, most of the dishes at the same price can be combined into platters at will, providing customers with the opportunity to taste more dishes. The snack food is slightly inferior, and the puff pastry taste of Chongqing small crispy pork is rigid, which is caused by too much flour and too little egg liquid; The brown sugar glutinous rice cake also needs to be improved, the fried clothes are over-fried, and the breadcrumbs on the surface have been partially charred.
Compared with Yuwei Xiaoyu and Sanbudo, the bottom of Qihua's pot is more fresh and spicy, not as mellow as the first two. The dishes are also the most traditional with sesame oil, garlic, coriander and chopped green onions, and the seasoning section is filled with peanuts, kimchi, snacks and fruits, which diners can eat on their own.
Qihua has opened 3 stores in Xi'an, and there is basically no difference in taste, environment and service between the branches. The service staff are all middle-aged women, with quick hands and feet, and a sense of service, and they will knock on the door before entering the private room. However, Mandarin is slightly lacking, and there may be some communication barriers for out-of-town diners. Closed baskets are placed under each table to make it easy for diners to put their clothes away from the smell of hot pot.
