The brand has grown since its inception in 1993 and now has more than 600 directly operated and franchised stores in several provinces and cities across the country, including nearly 500 in Wuhan. Standardized production allows Evergreen Mai Xiangyuan's stores to have the same level of production, which is similar to Cai Mingwei. The hot dry noodles of Evergreen Mai Xiang Yuan are quite generous in the amount of sesame paste, and after stirring, the juice is rich and even a little greasy. The noodles are firm and tender, and the thickness is uniform. The side dish with diced radish has larger grains, but the lack of pickling results in a lighter flavor, which is the minus point of this bowl of hot dry noodles. In addition to the signature hot dry noodles, Evergreen Mak Heung Yuen also offers eggnog, fried buns, noodle nests, rice bowls and other snacks and staple dishes.
Evergreen Mai Xiangyuan's stores adopt a unified decoration style, fresh and simple. Several large stores, including the Wansongyuan Road store, are spacious and bright, and the hygiene situation seems to be worry-free. The waiter's attitude is acceptable, and the diners are responsive.
However, the franchise system has also brought problems of uneven quality control to restaurant operations, and in September 2018, the Evergreen Maixiangyuan Huanan Seafood franchise exposed a scandal such as its employees rolling noodles on the ground.
