Iron cake is a well-known breakfast in Chongqing around the 80s of the last century. It gets its name because the utensils it is made resemble an old-fashioned iron. The raw material is rice milk with sugar, eggs and mash. When making, pour the rice milk into the round hole on the soldering utensils, and bake the rice milk until the slurry is covered and the two sides are golden brown, the taste is crispy on the outside and tender on the inside, sweet and fragrant. Compared with camellia and glutinous rice balls, the production of iron cake is relatively complex, and the cake body needs to be stirred repeatedly during the production to ensure that it is matured stably and heated evenly, the operation is very cumbersome, and the dining efficiency is low, and most breakfast shops have given up selling. At present, there are only a few stalls in Chongqing that specialize in selling iron cakes.
Located in the Liberation Monument, the dumb iron cake is one of the most popular iron cake stalls in Chongqing, run by a deaf and mute old couple. In 2012, Chongqing Morning News conducted an exclusive interview with the stall with the title of "The Last Iron Cake of the Deaf and Dumb Couple Dumping the Liberation Monument", which attracted the attention of many citizens and spontaneously went to the stall to buy iron cakes, in order to "rescue" this once popular classic snack. Today, the stalls are still active in the vicinity of Jiefangbei Porcelain Street.
Due to the restrictions of the city's appearance regulations, the dumb iron cake can only be operated during the morning rush hour (6:00-9:00), and the opening time cannot be extended in response to the abundant passenger flow of Jiefang Monument. In addition, the location of the stalls is not fixed, so diners who want to visit should leave plenty of time to find them so as not to run out of steam.
