Vegetables Unbounded - Business Reviews

Song Yuanbo, a leading figure in China's vegetarian industry, built a high-end vegetarian restaurant, and the Bund store in Shanghai won one Michelin star in 2018.

Chengdu's vegetarian industry is second only to Beijing, Shanghai, Guangzhou and Shenzhen in terms of total volume, and is dominated by domestic chain brands. Song Yuanbo, who was a leader in China's vegetarian industry, made a name for himself in his early years with the "Jujube Tree" restaurant for civilian consumption, and then he founded the high-end vegetarian brand Da Vegetable Unbounded, whose dishes "break the boundaries of religion, national borders and cuisines", which is "unbounded". The Shanghai store won the honor of Dianping's Black Pearl One Diamond and Time Out's Vegetarian Restaurant of the Year. After being awarded the Michelin "Bib Gourmand Recommendation" in 2017, the 2018 Michelin Guide named the Bund and the Art Pavilion one Michelin star, which is a testament to the rapid development.

The Vegetable Unbounded Store is divided into two categories: "Meisu Restaurant" and "Hemei Restaurant", the former is mainly a la carte sharing, and the latter is mainly a set menu, which is generally divided into three grades (only about 20 menu items are provided outside the package), Chengdu Yintai Store and Shanghai Bund Store are the only two Hemei Restaurants in the country. There are about 50 dishes without boundaries, of which 30 are standing classics, and the rest will be adjusted and innovated according to the season and ingredients. Whether it is a regular dish or a seasonal dish, the taste, ingredients and colors can be matched with each other to create an elegant and refined artistic conception, and the unbounded vegetables give the food a higher aesthetic significance. When the menu is changed, the chef will launch new products according to the style of "spring green, summer red, autumn yellow, and winter white", corresponding to the 24 solar terms. Most of the dishes are named after the name of the dish, and the names of the signature dishes such as Dream Ling, Rolling Bead Curtain, and Qinyuan Spring make people scratch their heads at first glance, but after serving the dishes, they make people feel suddenly enlightened. Taking the "big beads and small beads falling on the jade plate" as an example, the mixture of sweet beans, chicken head rice and black glutinous rice unfolds like an ink painting from deep to shallow, and the appearance and imagery are integrated. The other dish is "Like a Dream Order", which uses osmanthus jelly to wrap lily paste and lotus seed red date puree, with a soft and glutinous skin, with a fresh and warm texture that is tangential to the theme. It's worth noting that many of the set menus contain five spices, but there are also vegan versions, and the waiter will check with customers to determine the taste of this aspect before placing an order. 

Located on the second floor of Intime City, the Chengdu store uses three-dimensional materials, lighting, projection, and water mist to simulate the topography of Chengdu surrounded by mountains and rivers. The elegant solid wood tables and chairs, with terrazzo, wood, linen and other elements, are simple and comfortable in style, and the soft and undulating pattern adds to the elegant texture of the environment. The waiters of Vegetable Unbounded always maintain a cordial and polite attitude in the process of guiding seating, ordering and serving, and can introduce each dish in detail when serving, and will also ask guests to provide opinions on the dishes after eating. However, the food is served at a slower pace and the meal time is slightly longer than that of regular restaurants, so customers need to wait patiently.
