Zhu Hongxing is a long-established noodle restaurant in Suzhou, which was founded in 1938 and has a history of 80 years. Among the many "Xingzitou" noodle restaurants in Suzhou, Zhu Hongxing can be among the best in terms of qualifications and scale. In the novel "Gourmet" by Suzhou local writer Lu Wenfu, the first thought of the protagonist after getting up is to go to Zhu Hongxing to eat noodles, which shows its fame back then. Today, Zhu Hongxing has opened branches in Nanjing, Wuxi, Yancheng and other places, covering Jiangsu.

In order to control the taste and quality of the dishes, Zhu Hongxing set up his own central kitchen and distribution center in 2007, where soups, stewed meat and shrimp are made into semi-finished products and distributed to all stores, a move that is not common among the more than 2,000 local noodle restaurants in Suzhou. However, it has had little effect, and Zhu Hongxing's pastry has not maintained a consistent taste in its rapid development. The reason is that the seemingly simple Soviet-style noodles are actually very demanding, and the inconspicuous action of scooping noodles can have a great impact on the production of noodles.

Zhu Hongxing's dishes are varied, in addition to the common toppings, pork liver, shredded pork in Beijing sauce, and kidney flowers are also on the menu. Among them, frozen chicken noodles are Zhu Hongxing's golden signboard. Frozen chicken is made by the coagulation of collagen at low temperatures, so it is only available in winter. Frozen chickens are made from 8 to 12-month-old roosters, which are naturally frozen after soaking, rinsing, washing, blanching, and baking to the process. It has a crystal clear appearance, with chicken looming in the jelly, and red goji berries in it. The pale yellow jelly turns into chicken soup after entering the mouth, which is full of umami, and the selected chicken is also very tender and slightly chewy. Frozen chicken noodles must be eaten across the bridge to be considered authentic, do not soak the frozen chicken directly into the noodles, a bite of frozen chicken noodles, wait for the fresh fragrance of the frozen chicken to melt in the mouth, and then pick a chopstick noodles, rich in layering. However, this bowl of noodles is not available in every Zhu Hongxing store, and is only available at the Qimen Road store.

Zhu Hongxing currently has dozens of branches in Suzhou, each of which is at different levels. Among them, the Qimen Road store is the most seasoned and still maintains a high standard. This shop has gray walls and black tiles, and it is very conspicuous on the side of the road. The interior of the restaurant is clean and tidy, brightly lit, and the dining experience is first-class.
