Dunhuang Building was originally the canteen of the Gansu Office in Shanghai, and it began to open to the public in 2009. After the Dunhuang Building was converted into a restaurant, the Gansu Shanghai Office specially introduced many professional chefs from Gansu to the restaurant, and has been known as the "most authentic Gansu restaurant" for many years.

Gansu, like most of the northwest, mainly eats noodles and beef and mutton, but because of the large span between the two, many restaurants inevitably lose sight of one or the other. Either they can only focus on all kinds of beef and mutton, or they can open a beef noodle restaurant specializing in noodles, and there are very few restaurants like Dunhuang Lou that can take into account both meat and noodles.

Lanzhou beef noodles are the signature dishes of Dunhuang Building, and the beef noodles here are the same as those in Lanzhou, with a total of 8 kinds of noodles wide, including large width, thin width, leek leaves, two pillars, two fine, three thin, thin noodles and capillaries. No matter what kind of width, each bowl of beef noodles can achieve uniform thickness of noodles, which shows that the ramen chef has deep skills. Among the 8 types of noodle widths, the second thin taste is the best, and if the customer does not specifically indicate it, the restaurant will also default to the second thin width. The beef noodles just served on the table are steaming, the soup base is clear, and drinking a sip of hot soup while it is hot is the most authentic way to eat, however, in order to take care of the local taste, the beef noodles of Dunhuang Lou do not add oil and spicy seeds by default, but put them on the table and add them by the diners themselves. Authentic Lanzhou beef noodles have no flaky beef on the surface, only small pieces of meat left over from the soup at the bottom of the bowl, so most diners will order an additional plate of beef to add to the noodles. The smooth and firm noodles are served with fatty beef and refreshing white radish, and the chopsticks are hearty and unfinished.

The hand-grabbed ribs are served at a super high rate, and they are basically a must-order when they arrive at the store. The ribs are boiled in traditional water, and no spices are put into the cooking, and the hand-grabbed lamb chops in Ningxia restaurant are the same, the mutton in Dunhuang Lou also does not have any fishy smell, and the meat fiber is delicate, although the mutton fat layer is much thicker than the mutton chops in Ningxia restaurant, but it is fragrant but not greasy, and the seasoning with pepper and salt and raw garlic slices is also very northwest characteristics. Friends who like to drink soup can try stewed lamb or clear water lamb chops, these two soups are also authentic, only coriander, wolfberry and radish are added to the soup to enhance the flavor, and the original aroma of mutton is rich. If you prefer a heavy mouth, the choice is more abundant, such as lamb skewers, yellow braised lamb, salt-and-pepper lamb liver, spicy braised lamb bone sticks, grilled lamb chops, roast lamb legs, roast lamb back, roast whole lamb, whether it is an ordinary meal or a business banquet, you can meet it.

The Lanzhou gray beans, milk and egg mash and sweet paste of Dunhuang House are also loved by diners. Gray beans are boiled with hemp-colored peas, the texture is thick and glutinous, and the beans are fragrant and plump, because a small amount of ash edible alkali is added, and the sweetness is sweet with a hint of saltiness. Milk egg mash is made by boiling fresh milk and rice wine mash, and then adding eggs, peanuts, sesame seeds and other ingredients to make it silky and refreshing. Sweet pastry is somewhat similar to mash, mainly made from fermented coarse grains such as oats and barley, which has a sweet taste and a stronger chewiness, and if the fermentation time is right, you can also enjoy the bursting feeling of grain grains. The multi-course special meals may not be as good as the local taste of Gansu, but the preparation method is authentic, and I believe that most of the old food can find a little taste of hometown here.

Dunhuang Lou main store is located at the subway exit of Zhenping Road, next to a Gansu specialty supermarket, the restaurant peripheral building is old, slightly dilapidated. The fast food area on the first floor is always full, and there are many customers in the noodle section every day. The dining area on the second floor is an old-fashioned restaurant, without too much decoration, although it is an à la carte area, but the ordering diners are basically a bowl of beef noodles. Some areas on the second floor and the third floor are private rooms, decorated with some business elements, suitable for banquet guests. The service of Dunhuang House is slightly better than that of Ningxia Restaurant, although it is not warm and polite, but the needs of customers can basically be solved. The restaurant has three stores in Shanghai, and two branches are located on Changning Road and Yincheng Road, among the three stores, the main store has the most stable food production, Changning Road is the closest to Jing'an business district, and the Yincheng Road store has the most stylish decoration, diners can choose according to their own needs.
