Opened in 2004, Amier Restaurant is one of the earliest Qinghai restaurants in Shanghai.
Qinghai has always been a large sheep producing province, although Qinghai sheep is not as good as Inner Mongolia sheep, Ningxia sheep, but the mutton produced in Dulan, Mutual Aid, Wulan Chaka, Hualong, Qilian, Menyuan and other places in recent years is famous. The mutton used in Amier Restaurant comes from the pasture at the foot of Qilian Mountain, and the breed is close to that of Tibetan sheep, with tender meat and little flavor, so there is no shortage of white-boiled dishes that can retain the original aroma of mutton. Braised lamb is made from lamb chops mixed with potatoes and barley noodles, surrounded by sauce, several ingredients have been fully flavored, and the soft and glutinous potatoes and crisp barley noodles are the favorites of female customers.
"Tendron" usually refers to the thigh muscles of cattle and sheep, and its meat is compact and wrapping tendons, which is one of the best parts of beef and mutton.
The roast lamb tendon at Amire is of high quality, far superior to other barbecued meats, with a golden skin that is roasted until the fat is opened, and the tendon is torn off according to the fiber pattern, making the meat tender and delicate. The restaurant's Gobi air-dried yak strips have always been highly regarded, and if you want to try highland yak meat, this is the perfect choice. Some diners will guess that this dish is a "beef jerky" with hard flesh when they see the word "air dried", but in fact, this dish is stir-fried in hot oil, and the strip-shaped yak meat has a clear texture and a moderate soft and hard taste. Under the catalysis of high temperature, the flavor of dried chili peppers, Sichuan pepper and other spices is all released, and the spicy taste is even more enjoyable.
In terms of staple food, baked naan cakes, barley cakes, and peacock tongue noodles are simple to make, and the production is stable, so there will be no chefs who miss their hands. For dessert, sweet pastry or Qinghai yak yogurt is recommended. The sweet pastry at Amier is made from barley, which has a more sandy taste than the buckwheat sweet paste in Lanzhou, which is perfect for relieving the greasy meat. Yak yogurt is made from fermented yak milk, which has a silky but sour taste, and is served with honey.
The restaurant is located in the New World Leisure Harbor, downstairs is Nanjing East Road Pedestrian Street, it is not recommended to drive. Compared with the simplicity of other Northwest restaurants, Amier is much more refined as a whole, but because it is a halal restaurant, Islamic style can be seen in many places in the lobby, and all the waiters wear white hats or black cloth as headscarves, which has a strong sense of nationality. The restaurant service standard is good, the service staff are smiling and courteous, and the guests at every table can enjoy warm and thoughtful service.
