Cat ears
Cat's ears are a type of pasta that closely resembles cat ears, and are somewhat similar to Italian shell pasta. According to folklore, its origin is related to the story of Qianlong's visit to the West Lake, in fact, it is a traditional noodle dish in Shanxi and Shaanxi, which resembles the ears of a small flower cat, hence the name. Hangzhou is located in the rice cultivation area south of the Huai River, but the cat's ears are pasta, and it is likely that the Song Dynasty transplanted the northern noodles to Hangzhou, combining shrimp, ham, mushrooms, dried scallops, bamboo shoots, Shaoxing wine, etc. as local ingredients, and was improved into a popular and high-quality cuisine. Nowadays, restaurants in Hangzhou have simplified their practice, usually using shredded meat soup under cat ears, which is light and moisturizing. Cat's ears are soaked in clear soup, white and small, very cute, plus the dough pressed out by hand is not chewy, the taste is soft, especially suitable for the elderly, children to eat, the price is only ten yuan.
