In 1988, a small restaurant with frogs, pickled cabbage fish, shrimp and crab pot appeared on the street side of Yangjiaping, Chongqing, and the owner played a sign of "Chongqing Jianghu Cuisine" at the door of the red black bottom. This is the first time that "Jianghu cuisine" has appeared in Chongqing's catering industry as a separate category, so this small restaurant is regarded as the originator of Chongqing's Jianghu cuisine. Subsequently, the owner of the small shop officially founded a Jianghu restaurant with his surname, namely Yi Laotou Three Dishes.
At present, Jianghu cuisine, Chongqing hot pot and Chongqing noodles form a three-legged trend, and Old Man Yi is absolutely indispensable. This is not only reflected in his establishment of the model of "hard dishes and home cooking" in Jianghu restaurants, but also in his creation of the environment. Different from many Jianghu dishes with poor environment and uneven service, the current Yi Laotou three dishes are located in shopping malls, with a clean environment and well-managed, which is completely different from the traditional dirty and messy Jianghu restaurants, like a modern catering brand. In May 2018, Yi Laotou announced that he had obtained tens of millions of financing, which was the first time that Jianghu cuisine had received capital attention.
There used to be nearly 200 dishes in Yi Laotou's store, but after the renovation, the new restaurant has reduced the number of dishes to 30, retaining the most classic "big and small" and more than a dozen side dishes, plus four local snacks, returning to the number at the beginning of the opening. Spicy Jianghu Frog, Lemon Sauerkraut Fish and Overlord Shrimp and Crab Pot are the "Three Treasures of the Town Store" of Boss Yi, which correspond to the three flavors of spicy, sour and fragrant sauce respectively, which have been improved several times and have lasted for a long time. Among these three hard dishes, the spicy frog and sauerkraut fish are more recommended, the former contains bullfrog, shrimp and flower nails, as well as lotus root slices and lotus skin, and there are many rattan peppers, Sichuan peppercorns, and Chaotian peppers in the red oil soup base, reflecting the "spicy and fresh fragrance" of traditional boiled dishes. In contrast, another sauerkraut fish dish has been modified with lemon slices in the soup base, and sourness instead of spicy as the main seasoning. Chicken feet and fish heads are added to the shrimp and crab pot, and the seasoning is more inclined to sauce stew, and the spicy taste is not flattered, combined with the price of 168 yuan, the cost performance is low.
Steamed fat sausage, fresh pepper crucian carp and landlord's intestine Wang powder constitute three small samples. These three dishes derived from local cuisine are acceptable, but they are slightly inferior to traditional Jianghu restaurants in terms of food and taste. Taking the steamed fat sausage with the highest appearance rate as an example, the fat sausage is clean, and the steamed method also highlights the soft and glutinous taste, that is, the potatoes on the substrate are not seasoned, and the fat of the fat sausage is absorbed and the smell is slightly larger, which increases the greasy feeling. The original crucian carp with fresh pepper crucian carp is large enough and the meat is fresh and tender, but the botanical aroma and spicy feeling of the fresh pepper in the soup base are not prominent enough, and guests with heavy tastes will rank it below Zeng Lao Yuzhuang.
As for side dishes, the "Yellow Peel Melon Thin" made from pickled cucumbers is quite a highlight, and the cucumbers with the core removed are cut into thin strips, leaving only the crispy skin, and the taste is sweet and salty, making it a good accompaniment to the snack. It is worth mentioning that Old Man Yi specially purchased a Japanese Zojirushi brand rice cooker, and the hot rice was placed on the long table for the guests to take by themselves, and the rice grains were distinct, soft and warm, which was obviously different from the rice cooked on a large scale in the steaming cabinet.

The façade is mainly red and black, and the atmosphere is dark, so a chandelier above the head of each table increases the brightness and also makes it better when taking pictures. The spacing between the seats is large, which has a higher privacy compared to traditional Jianghu restaurants, and there are even compartments and private rooms for larger groups of guests to sit. Most of the waiters in the store are young people, with a courteous attitude and responsiveness; Complimentary snacks such as walnuts, cherry tomatoes, and candies are provided at each table. The store often offers special deals on food and drinks.
