Today's Wang Ji Jintumen is still the original one table and one carbon stove, but the carbon stove is equipped with a conveyor belt grill to realize automatic rotating barbecue.
Automatic ovens are no longer new in first-tier cities such as Beijing and Shanghai, but in Hangzhou, where brand kebab restaurants have not yet set foot in the brand's kebab shops, Wang Ji Jintumen's skewer model is still rare. The restaurant provides all kinds of raw meat ingredients such as lamb skewers, beef skewers, honey chicken wings, etc., which are grilled by diners themselves, and are simply marinated with salt and cooking wine before serving. However, there are few types of spices on the Jintumen table, only refined salt, white pepper, cumin and chili powder. It should be noted that the mutton ingredients of Jintumen, such as mutton skewers and lamb chop skewers, generally have a strong fishy smell and a stronger milky flavor, which is suitable for mutton lovers with heavier tastes; If it is difficult to accept the milky smell, the white pepper and cumin in the seasoning can reduce the smell to a certain extent.
On the one hand, the self-service barbecue gives diners more freedom, but on the other hand, it also leads to a very subjective taste. This is infinitely magnified by Jintumen's extensive service: compared with well-known self-service kebab restaurants such as "Once Upon a Time" in Beijing and Shanghai, Jintumen lacks the necessary guidance and assistance services, whether it is the operation of the grill, the cooking time of the ingredients or the use of seasonings, diners have never received prompts, guidance or assistance from the store, and the effect of grilled food is naturally very different.
However, the vegetarian dishes and seafood are grilled by the kitchen, and the flavors such as eggplant, green beans, and lotus root slices are widely acclaimed. The red willow branch lamb skewers, which are difficult to grill, are also grilled by the kitchen by default, and under the hands of the skewer master, the mutton flavor has also been better digested, the mutton skewers are fatty, the taste is delicate, not fishy, and the seasoning is just right. If you are really not interested in self-service skewers, you can also ask for all the ingredients to be roasted on your behalf, but the 10 yuan opening fee for self-service skewers still has to be paid by diners.
Wang Ji Jintumen Skewer Grill currently has three branches, the old store is located in Baijingfang, and the other two stores are located at the foot of Baobao Mountain and Fengtan Road. The environment of the old store is quite ordinary, the space between the oven and the seats is cramped, and the hygiene situation is not optimistic. There is a high-power range hood at the bottom of the oven, which greatly reduces the indoor oil smoke, but there is still a small amount of oil smoke left, and the dining space is also more stuffy under the charcoal fire. The "Stone Age" branch at the foot of the gem mountain has the cleanest environment, with a stone cave-themed decoration, relatively spacious seats, and the ingredients and services of the new and old branches are basically the same level.
