Brewing technology
Jack Daniel's production process is subject to strict regulations, and the selection of raw materials such as corn, rye and barley is strictly controlled. These grains are processed with mountain spring water near the distillery to become a kind of malted pulp. The water is kept at 56 degrees Fahrenheit all year round and contains no iron but is rich in limestone. Jack Daniel's Whiskey is made in the ancient way of making the mash sour. Of course, this whiskey is not really sour, we call it sour malt whisky.
The end result of fermentation is the so-called "brewer's beer", which is then refined in a still. If the whiskey is immediately aged in barrels, it may become a bourbon. However, after refining the whiskey, the Jack Daniel's Distillery also put it on top of 3 meters of charcoal fired from sugar maple trees, and the wine slowly dripped down. It was this final process that made Jack Daniel's whiskey far superior to bourbon, adding a distinctive flavor to Jack Daniel's and eventually earning it the nickname "Tennessee Whiskey".
Winemaker
In the 130-year history of Jack Daniel's Distillery, there have only been five people who have served as winemakers other than Jack Daniel's himself, and Benjamin (Jimmy Bedford) is the current chief winemaker of the plant.
