Tokyo Kaiseki Hinogaki is the latest kaiseki restaurant to open in Chongqing, and it is the third high-end Japanese restaurant in Chongqing after Fujiya and Kitayama. The name of the store in Tokyo Kaiseki Hiragaki is derived from the surname of the founder, Takao Higaki, and takes the meaning of "Hinoki gathers ingenuity and returns the style of the wall". The owner, Takao Higaki, had lived in Shanghai for more than 10 years before opening the store in Chongqing, could communicate in Chinese without barriers, and was very familiar with Chinese food and customs, so Tokyo Kaiseki Higaki also paid more attention to presenting a business method that is more acceptable to Chinese and even Chongqing people.

At present, the seafood ingredients in the store are flown in three times a week, from Japan to Chongqing via Shanghai, and the ingredients can be guaranteed to arrive in Chongqing on the same day they arrive in Shanghai. Of course, the cost of transportation can be imagined. The signature sashimi platter is a combination of sweet shrimp, king salmon, tuna and other seafood with fresh ingredients and excellent ingredients. Tokyo Kaiseki Hinogaki is located in Chongqing Baixiang Street.
