Hui Zhenyuan is most famous for their Brazier Mountain Yellow Beef Brisket. The beef brisket is selected from the tripe belly of Anhui Jixi cattle, the meat of the tripe is soft, the muscles and flesh are connected, the fat amount is moderate, and it is easy to cook crispy. After the brisket has been simmered for two hours, it is placed in a brazier with potatoes, which is surrounded by tortillas and finally the bottom of the pot is lit and served to the diners' tables.
