Different from the big stoves and fires of large-scale catering, small restaurants such as Cuiting Restaurant have obvious home-cooked characteristics. On the basis of traditional local dishes, Cuiting Restaurant has also added a lot of unique dishes, although it is innovative, but it still maintains the shape and meaning of local dishes, with thick oil red sauce, salty and sweet taste throughout it. Grass shrimp in fermented bean curd sauce is the representative work of the restaurant, seasoned with fermented bean curd juice on the basis of fried shrimp, with a little vinegar, fresh and salty and slightly sweet, the sauce is condensed on the back of the shrimp, and the butter firing also gives the grass shrimp a little milky flavor, and the taste is more round and full. The grass shrimp selected by Cuiting are impeccable in terms of freshness and size, the back of the shrimp is cut in order to absorb the flavor, the shrimp meat is sweet and tender, the taste is clear, the elasticity is smooth and crisp, the big mouth is full, and the fermented bean curd seasoning does not cover up the umami of the shrimp meat at all.
