In 1377, Yiyuanqing is the grandson of Zhu Yuanzhang, the king of Ninghua, Zhu Jihuan, the workshop of winemaking, grinding noodles and vinegar making, because the vinegar ingredients produced are exquisite, finely made, the flavor is excellent, and the quality remains unchanged for a long time, the king of Ninghua will dedicate it to the palace, and since then, Yiyuanqing has become the imperial vinegar of the palace, and the generations have drunk each other. In the early years of the Qing Dynasty, Yiyuanqing's vinegar-making technology was introduced to the people. By the twenty-second year of Jiaqing (1817), Yiyuanqing Laodian had a daily output of 150 kilograms of vinegar, which was the largest vinegar-making workshop in Shanxi at that time. Since then, although Yiyuanqing has changed hands several times, the quality of the vinegar has always been the same, and the trade has endured. Today, the former Ninghua Mansion is not a symbol of the dignity of the princes, but the Yiyuanqing vinegar named after it is as mellow as before, and has become a time-honored brand in the vinegar industry loved and trusted by Taiyuan people.

In the past few years, after several technological innovations, on the basis of maintaining the traditional flavor, the operation process has been improved, so that the starch utilization rate and unit yield have increased by half. Especially after the enterprise contracted in 1987, the economic benefits have increased significantly.

Yiyuanqing vinegar factory has experienced more than 200 years of ups and downs in this ancient land, and only today can it develop rapidly. Now this factory is inheriting the precious heritage left to us by our ancestors, not only developing edible vinegar, but also researching and producing a series of new products such as beauty vinegar, health care vinegar, and medicinal vinegar.

Yiyuanqing vinegar is a traditional solid-state fermentation process, which is used to increase color and flavor by fumigation in the later stage, and the vinegar is fragrant, sour, sweet and cotton, brown and red in color, and mellow in taste. These characteristics are inseparable from the unique craftsmanship formed by Yiyuanqing for hundreds of years. In terms of ingredients alone, Yiyuanqing's main ingredients, high-quality sorghum, auxiliary materials, chaff, etc., must be strictly selected. While there can be substitutes for these ingredients in brewing theory, centuries of practice have shown that any slight change in the recipe of traditional ingredients will change the flavor of the vinegar. Therefore, in the process of development, Yiyuanqing adheres to the essence of traditional skills, steaming, fermentation, smoking, drenching, brewing, blending, and every link is refined. "Mian, sour, sweet, seasoning, and food, Chinese people compete for Sanjin vinegar, steaming, fermentation, smoking, summer sunning, winter fishing, who knows the hardships here." It is the painstaking efforts of dozens of generations of Jinyang vinegar brewing people that have condensed into the "Chinese time-honored brand" of Yiyuanqing, and the production spirit of Jin vinegar to inherit the traditional art, adhere to the healthy concept of pure grain brewing, and the business culture of genuine, honest and trustworthy. Therefore, Yiyuanqing dedicates to the society is always the absolute green vinegar, and the Yiyuanqing trademark has also been recognized as a famous trademark in Shanxi Province.
