Cantonese lap-mei

"The autumn breeze rises, eat cured meat" is a well-known mantra in Guangzhou, and all year round, the upper and lower Nine Emperor Shanghuang cured meat shops are full of customers. The sausage is the king of long-term sales, and the fat and thin pork leg meat is wrapped in the pork casing film, and after drying, it becomes a sausage with a rich aroma. It is suitable for making claypot rice or sautéing snow peas, putting a few slices on them, or even adding the whole one to the rice cooker to steam. The standard configuration in the cured meat shop is golden bacon, all kinds of sausages, egg yolk cups, Jinhua ham, etc., ranging from more than ten yuan to several hundred yuan, and so on. However, Cantonese cured meat is slightly sweeter, and friends in the north may not be used to this taste.
