Dade Seat - Business Reviews

Dade is a chain brand from Beijing, in Beijing, Dade Japanese food has been taking the route of cheap Japanese food, with a per capita consumption of about 200 yuan. As the most high-end brand of Dade, Dade will seat is currently only set up in Chengdu. Officially opened on the second floor of Taikoo Li in 2016, Dade Chair has become a hot topic in Chengdu's high-end dining scene.

The Daitoku Kaiseki Restaurant was designed by ODD Design Firm, a combination of young Japanese designers. Inside the 8-meter-tall store, the six square light-filled private rooms are stacked in the form of building blocks, and each private room has a glass window at the bottom, allowing you to enjoy the Japanese landscape outside the private room. The private room is slightly staggered from the edge of the floor, giving it a sense of suspension and lightness. The dim lighting renders the whole store quiet and warm. ODD Design also won the 2017 AD100 China Best Dining Space Award and Popularity Award for its restaurant design at Datoku Kaiseki.

Officially, the ingredients are flown in from Nagasaki, Japan, New Zealand and other places, but even so, it is almost impossible for Chengdu, which is deep inland, to eat fresh seafood caught that day. It will take at least two or three days to reach Chengdu through cold chain transportation, which is not in season. In addition, at the beginning of 2017, Daedeok held several tuna fishing events, and more than 100 kg of whole tuna arrived at the store. The fishing scene really attracted many passers-by, and the official also announced that it would insist on holding a fishing event on the Friday of every month, but after April, the fishing event disappeared. Whether in terms of food transportation or the consumption level and acceptance of local people, the development of high-end Japanese food in Chengdu is full of difficulties.

Daitoku Kaiseki serves kaiseki cuisine and set meals, and there are currently three types of Wagyu beef courses, sashimi courses, and crab courses. The average per capita price ranges from 1,800 yuan to 2,000 yuan. The 10-course menu: appetizer, warm dish, sashimi, boiled food, strong dish, yangshi, grilled food, main dish, juice, and fruit seeds, the process is quite ritualistic in Japanese kaiseki cuisine. High-end ingredients such as tuna belly, black abalone, and caviar will be presented to diners as scheduled, but the processing of the ingredients is not meticulous enough, such as the shrimp line is not cleaned, which can easily reduce the experience of fine Japanese food. Compared with Japanese food at the same price in coastal cities, the cost performance of the Daidoku Kaiseki is low.
