The Old Man's name, décor and wine list are inspired by Ernest Hemingway. Hemingway was also an alcoholic, either writing or drinking, and there is no shortage of depictions of alcohol in his works. The names of the wine lists are also derived from Hemingway's works and life stories, such as "The Sun Also Rises", "Farewell, Arms", "Death in the Afternoon" and other works have become the names of cocktails. There are only 9 cocktails on the wine list, but it is also among the top five in Asia with this small number of categories. The cocktail on the list, titled Death In The Afternoon, is made with champagne and vermouth, and is green, sweet in the mouth, with a strong lemongrass flavor and nutmeg foam, which is perfect for women. Green Hill of Africa uses Pisco as the base wine, with turmeric, tamarind and lemon juice, and is covered with delicate egg white foam, which is slightly sour and has an herbal taste. In addition to cocktails, The Old Man also offers classic liquors. For those who want to drink spirits, a highball or a nickeloon is a must-see for spirits lovers.

There are no dim lights or dim booths, and the space layout is simple. The whole area of The Old Man is not too big, and customers are shared at a large long table, and there is a slightly more intimate space next to the long table. The bar counter is different from the traditional bar, the bar is like an open kitchen operation area, and the back of the bar is not a rack for liquor, but an abstract Hemingway portrait wall. It's more like an open party, with the bartender standing in the middle of the bar, constantly showing how each cocktail was made, and even then, you can remember how many rounds different customers have made. When the bartender is not too busy, the bartender will take the initiative to chat with the customer, ask the customer if they are satisfied with the wine, the taste of the drink, etc., and the waiter will also take the initiative to bring the customer snacks to accompany the wine, and when leaving will also confirm whether they are satisfied with the wine and service of the day. It's never awkward to go alone.

The Old Man isn't a Speakeasy genre, but it's not easy to find either. Speakeasy bars originated in the United States during Prohibition, and due to Prohibition, many bars disguised themselves as other shops or hidden in hard-to-find places, and secretly sold alcohol, also known as speakeasys. Now these bars are starting to be resurrected and gradually becoming a trend, without store signs, hidden in invisible corners, or disguised as hair salons, hot dog parlors, etc.

The Old Man is tucked away in Central, which is full of bars, there are no bar signs on the side of the road, and the bar also needs to go through a staircase, the real bar is under the stairs, and it is easy to miss it if you don't navigate it for the first time. Waiters in suits and leather shoes stand on the side of the street, illuminate the customers, push the door open through the stairs, and then actually reach the bar. The Old Man does not accept reservations, and the bartenders and waiters are almost all foreigners, so they need to communicate in English. The price of a cocktail is basically 120 Hong Kong dollars a glass, which is within the normal range from the overall price of Hong Kong.
