A Yi Abalone was founded in 1984, and its founder is the famous "Abalone King" Yang Guanyi.
Yang Guanyi is a true world-class celebrity chef, and has won numerous awards in his lifetime, including the Platinum Award, the highest honor of the French Master of Cuisine, the American Five-Star Diamond Award, the World Culinary Elite Award, the French Gastronomy Prestige Award, the Lifetime Achievement Supreme Award of the China Hotel Association, and he is the recipient of the C.C.C. Gold Medal, the highest honor of the International Association of Imperial Chefs, and only three people in the world have received this honor so far.
Yang Guanyi originally founded the Fulin Hotel in Hong Kong, and his signature dish "Ah Yi Abalone" is internationally renowned, and the Fulin Hotel is still one of the most prestigious restaurants in Hong Kong. Mr. Yang Guanyi has performed abalone cooking skills in the Great Hall of the People and the Diaoyutai State Guesthouse, and has cooked for Deng Xiaoping, Clinton and other Chinese and foreign leaders, all of which have been well received. Later, he opened a Ayi abalone restaurant in the mainland, which was also widely acclaimed.
"Rinsing with shark fin and eating with abalone" is a symbol of the privileged life of the old days. Swallow abalone fin is the specialty of A Yi abalone, and all kinds of abalone are the treasures of the town. Among the dried abalone produced in various regions, the abalone produced in Yoshishiin Iwate Prefecture, the abalone produced in Oma Prefecture and the net abalone produced in Aomori Prefecture are of the best quality and the most expensive. Yang Guanyi selected the best Japanese dried abalone, and simmered it in a clay pot and charcoal for a long time, and the cooked abalone was intact, like a fried egg, with a golden meatball exposed in the middle. The taste of soft-hearted dried abalone is soft, glutinous, smooth, chewy, and with the flavor of old hen, Jinhua ham and other seasonings, the taste is rich and layered.
The other dishes in Ah Yi Abalone Shop are also very outstanding, with fish maw being soft and glutinous, shark fin being delicious, and even ordinary stir-fried dishes are full of heat. The Shanghai store also offers tea market dim sum and lunch sets, which are relatively affordable and well-made.
At present, Mr. Yang Guanyi has established Ah Yi Abalone Princess (Hong Kong) Co., Ltd., which produces a variety of canned abalone, abalone and cucumber wings and dried products, as well as shrimp noodles, scallop noodles, Ah Yi XO sauce and other products. It is available online, and some products are also available in stores.
Shanghai's Ah Yi Abalone is decorated as a traditional Cantonese restaurant, with a wood color and a certain sense of age, but the environment is still clean and tidy. The service is mediocre and not outstanding. Private rooms need to be booked in advance, and some wild seafood and special dried abalone need to be notified in advance.
