Iceton is a must-visit bar for Guangzhou cocktail enthusiasts because it is dominated by one of the biggest masters in the Guangzhou bartending scene today, Wing Fan. It can be said that if you have not tasted his works in Guangzhou, you are not a qualified person鸡尾酒酒徒,作为City&Guilds英国伦敦城市行业协会高级调酒师,Wing Fan曾担任过雪莉门徒、BLCC、Monin Cup等众多业内知名比赛的评审,揽获的各大国际专业奖项更是数不胜数。Guangzhou高人气酒吧Hunting Bar、Torture严刑烤场等也是出自其手,但Iceton的设施与之前的店铺相比,算是达到了“顶配”。 Wing Fan最扬名的作品,便是那款Singapore Sling,全Guangzhou仅此一家能尝到最正宗的原版。这款新加坡国酒最初在1915年的Raffles Hotel的Long Bar发迹而风靡全球,是第一轮酒中最好的开胃酒。这款鸡尾酒原本专门为女性调制,酒体红润柔美,富含各类热带水果风味,口感酸甜适中,非常清爽,因为添加了苏打水,所以还能感受到碳酸气体对舌尖的微弱刺激。为了做到真正的高度还原,Wing Fan甚至将Long Bar的原装酒杯搬来Iceton,诚意十足。 Old Fashioned也是Wing Fan的拿手酒品,卖相浮夸别致、口味个性。他对传统Old Fashioned鸡尾酒进行了改版,混合使用了两款威士忌,酒中含有烟熏、泥煤、烧鹅等味道,更适合高阶饮酒人士饮用。如果真能碰上Wing Fan,不妨趁其空闲,抓紧描述一番自己的口味喜好,请他专门为自己定制一杯特调。需要注意的是,这家店的吧台位一定要提前预订。 目前市面上的创新鸡尾酒种类相当丰富,但像Iceton这般酒单基本被创新酒覆盖且口味尺度相当大的酒吧,目前还算罕见,或许不太容易被大众所接纳,但这些常人听起来不忍下咽的酒款,实际味道却令人惊喜。 少有调酒师真正有实力敢推出烧鹅味、牛扒味的血腥玛丽,但Iceton的酒柜上就能找出被烧鹅浸泡过的伏特加。伏特加酒精度数虽高,但风味特征少,被烧鹅的油脂浸入后,非常容易保留住烧鹅的香味。这款血腥玛丽以这支伏特加为基酒,加上番茄汁、李派林嗟汁、黑胡椒与辣椒酱,浓稠度相当高,感受完辛香微辣之后,就能尝到浓郁的烧鹅香味,甚至有酸梅酱的口感,极具个性。这款酒不仅越喝越热,还会产生一种饱腹感,绝对是一款让人饮而不忘的特色鸡尾酒。 不宜喝冻饮的女孩子们也有适宜的一款特色酒品,Iceton的Ginger hits milk and wine以香草味伏特加、姜饼味糖浆、夏威夷果糖浆、姜汁、牛奶等为原料,加热后放凉,待表皮凝结成膜撒上小撮桂花才算大功告成。这款饮品以咖啡杯装,从卖相上而言,更像是一款宫廷甜点。入口并没有很重的姜汁辛辣味,口感却是香醇细滑,温润感十足。 还有口味偏甜的摩卡马天尼、小瓦瓶装的荔枝风味特调——贵妃醉酒、酒精度数不高的Shark Attacked等一众特调同样值得推荐。Iceton酒水出品质量上乘,不定时会推出LTO menu(limit time offer),按季节限时供应鸡尾酒,令人新鲜感常在。 Guangzhou近年来speakeasy(美式地下酒吧)形式的酒吧非常流行,Iceton也是如此,藏匿在炳胜公馆正门旁的一个不起眼的小门里,但与那些空间狭小的speakeasy酒吧有所不同的是,Iceton的店面空间相对宽敞,顾客不会产生局促感,且整体氛围并不吵闹,是与三五好友私聊或独自小酌都不会出错的场所。

Singapore Sling
Singapore's national liquor, the only one in Guangzhou that can taste the most authentic original. Originally made for women, this cocktail is ruddy and feminine, rich in tropical fruits, and has a moderate sweet and sour taste, which is very refreshing, making it the best aperitif in the first round.
Old Fashioned
Wing Fan's specialty wine is pompous and chic, with a unique taste. A reimagining of the traditional Old Fashioned cocktail, this blend of two whiskies contains smoky, peaty and roast goose flavours for advanced drinkers.
Ginger hits milk and wine
Take vanilla-flavored vodka, gingerbread-flavored syrup, macadamia syrup, ginger juice, milk, etc. as raw materials, heat and let cool, and sprinkle a small pinch of osmanthus on the epidermis to coagulate into a film. It looks very much like a palace dessert, there is no heavy spicy ginger juice in the mouth, the taste is mellow and smooth, and the warmth is full, which is suitable for women who should not drink cold drinks.
