"Zhong Shui Dumplings" was founded in 1893, the founder Zhong Shaobai, only known as the later chef called Zhong Fansen, because the store was located in Chengdu's Lychee Lane, so it is also called "Lychee Lane Dumplings". The most famous varieties of the shop are red oil dumplings and clear soup dumplings. The red oil dumplings are slightly spicy, fragrant, salty and sweet, and with the store's special salt and pepper crispy pot, it is really a unique flavor. The red oil dumplings are made by hand, the filling is strictly selected, the production is fine, and the homemade salty red soy sauce in the seasoning is unique, and the seasoning is appropriate, which is deeply loved by eaters. Clear soup dumplings, delicious taste, light but not thin, delicate slag in the entrance, for the best noodle products. "Zhongshui dumplings" became famous in Chengdu in the 20s of the 20th century and became a famous local snack in Chengdu. In 1992, "Zhong Shui Dumpling" was named "Chengdu Famous Snack" by Chengdu Municipal People's Government, in 1995 it was awarded the title of "China Time-honored Brand" by the Ministry of Domestic Trade, and in 1999 it was awarded the title of "Chinese Famous Snack".

Later, people made wontons into a glaive shape, and they became dumplings. According to historical research, there were wontons in the Han Dynasty, and the real dumplings were in the Sui Dynasty and flourished in the Tang Dynasty, about 1,400 years ago. In the Tang Dynasty, dumplings had spread to remote areas. Archaeologists have found intact dumplings in a wooden bowl unearthed from a Tang Dynasty tomb in Turpan. If Wonton is the mother of dumplings, then she does have a little more feminine beauty than dumplings, its shape is chic and soft, its color is white and red, and its taste is mellow and soft. Dumplings add a lot of masculinity. Especially the hungry and sturdy northern dumplings. The southern dumplings, especially the Chengdu dumplings, although they have a clear yin and yang with the copying hands, but compared with the northern dumplings, they are a little more beautiful and pay more attention to grooming themselves. In 1990, Zhong Shui Dumpling was awarded the title of "Chengdu Famous Snack" by the Chengdu Municipal People's Government. Zhong Shui Dumpling is currently located at No. 7 Ttitok Street and No. 146 West Yuk Lung Street.

Zhongshui dumplings are net meat dumplings, which are incompatible with pork winter melon, mutton cabbage, fennel filling, beef celery, tomato pork, etc. Zhong Shui dumplings are also small, ten taels are only a small bowl, but good things naturally have their good taste. The dumpling skin used in Zhongshui dumplings is homemade, so that the dumpling skin is soft and hard, and the ready-made dumpling skin is too alkaline, and it is slippery when cooked, and the bite is not tough enough, and the skin is too thick. Red oil is made of Chengdu's famous red pepper noodles with vegetable oil, a small bowl of red oil dumplings in addition to red oil, as well as special soy sauce, sesame oil, garlic juice, salt, monosodium glutamate and other spices carefully blended.
