In the 40s of the last century, Hangzhou Yu Guohua and Chen Xiuqing fled to Chongqing due to the war. In order to make a living, they opened the "Hangzhou Xiaotangyuan Sweet Shop" on Baoan Road (now Bayi Road) in Yuzhong District, which opened the prosperous years of Xiaotangyuan in the mountain city.
The small rice balls in the mountain city are the size of a dragon's eye, the skin is thin and translucent, the filling inside is faintly visible, and the filling will flow out slowly when biting off, which is attractive. The exquisite selection of materials and production skills are the key to the achievement of small dumplings in Shancheng. Take the classic black sesame stuffed rice balls as an example: the filling is prepared with two-finger thick full-edge lard and black sesame seeds produced in Jiangxi and Henan, which has high oiliness and aroma. When wrapping the rice balls, Chen Xiuqing's original "dressing method" is used: use the thumb, index finger and middle finger of the left hand to pinch the rice ball noodles, and put the block of rice ball filling into the middle of the dough with the right hand to pinch and seal the skin to ensure the transparency of the skin of the rice balls.
Today's Shancheng small rice balls have achieved industrial mass production, and the product range has also expanded to moon cakes, cloud leg cakes and so on. Its physical stores also provide a variety of Chongqing snacks such as pea noodles, hand-picking, and cold cakes. At present, the dine-in price of small rice balls is between 7-10 yuan, and the rest of the snacks are generally around 10 yuan, which is low. In addition, Shancheng Xiaotangyuan only has the "Yuji Shancheng Xiaotangyuan" store at No. 2 Zhonghua Lane in the city, and the rest of the stores have nothing to do with the store.
