Flatiron cake
Iron cake is a well-known breakfast in Chongqing from the 60s to the 90s of the last century. It gets its name because the utensils it is made resemble an old-fashioned iron. The raw material is rice milk with sugar, eggs and mash, and the rice milk is poured into the round hole on the soldering device until the slurry is covered and the two sides are golden brown. During this period, the cake body needs to be stirred repeatedly to ensure that it is heated evenly and matured stably, which is relatively troublesome to operate. The ironing cake is crispy on the outside and tender on the inside, sweet and delicious, and has a unique taste with the aroma of mash.
Compared with the early dishes such as camellia and glutinous rice balls, the situation of iron cakes can be described as precarious. Due to the relatively cumbersome processes such as pulping and branding, many breakfast stall owners have given up making iron cakes. Taking the Jiefangbei area as an example, at present, only one stall of dumb iron cake insists on selling, and there are very few stalls selling iron cake in the city.
