Yuhua tea is a kind of green tea, which was newly developed by Nanjing in 1959. As a gift for the 10th anniversary of the founding of the People's Republic of China, it was named after the Yuhuatai originating outside the Zhonghua Gate in Nanjing, and has won the titles of national famous tea and high-quality famous tea for many times.
The technological process of Yuhua tea is roughly similar to that of West Lake Longjing and Dongting Biluochun, which needs to go through the steps of spreading, finishing, rolling, hair, and shaping, and the finished tea leaves are shaped like pine needles, with slightly pointed ends and a fine fragrance. Because the water content of Yuhua tea needs to be strictly controlled below 7% (10%-13% for general tea), and the pine needle-like appearance of tea needs to be ensured, the yield of Yuhua tea is relatively low, and the supply exceeds demand for a long time.
In the field of tea, the quality of tea is often distinguished by terms such as one bud and one leaf, one bud and two leaves. One bud and one leaf is also known as "one flag and one gun", that is, it is composed of a tea core and a piece of tea at the top of the tea tree, this kind of tea has a high tenderness, rich in tea polyphenols and protein, and the aroma is quiet and the soup color is clear after brewing, and the quality of tea will decline with the increase of the number of leaves.
According to the rate of one bud and one leaf, Yuhua tea can be divided into four types: special grade first, special grade, first grade and second grade, among which the rate of one bud and one leaf of special grade one and second grade is more than 85% and 75% respectively, and the appearance color is green and symmetrical, tight and round, and the smell is mellow. The first and second grades have about 65% and 50% of one bud and one leaf rate, and the appearance is generally symmetrical, slightly containing flat strips, and the aroma is slightly inferior. In terms of price, the tea picked before the Qingming Dynasty (Ming Qian tea) and the Ming Dynasty tea is quite different, the special Ming Ming tea is often around 2,500 yuan per catty, the Ming Dynasty tea falls by 20%-50%, and the first and second class tea is concentrated in 200-800 yuan per catty.
