When crayfish was introduced to Changsha, the taste was very simple, and it was only boiled in water and dipped in sauce to eat. The first flavored shrimp shop at the south gate appeared around 1996 and was called Shen Kee. Shen Ji flavored shrimp pioneered the practice of chicken soup with red oil, giving the originally light crayfish a full Hunan flavor. Although the Shen Ji flavor shrimp no longer exists, the development of flavor shrimp has become an indispensable and important component of Changsha's night snack category.
