Many Xi'an shabu restaurants pursue "Beijing flavor", but whether it is the environment or charcoal copper pot and other factors, it always makes people feel that there is a lack of taste. Established in 2016, Jade Shabu Fang has not been in business for a long time, but it is full of old-school Beijing flavor and is a replica of Xi'an's local shabu brand.

As a representative of the old school, Jade Shabu Fang naturally has a clear water pot base to choose from, which includes green onions, garlic and other condiments to enhance the flavor. Different from the restaurants on the list above, the clear water in Jade Shabu Fang is just ordinary tap water, and the "old cannon fan" is fully displayed. Of course, compared with the traditional pot base that costs about 30 yuan at other homes, Yushabu Fang only costs 15 yuan, which is in line with the market price. There is also a "palace medicinal food pot bottom" in the store, which includes cordyceps, lotus seeds, angelica, wheat dong, etc. In addition, the restaurant is a traditional charcoal copper pot, and the charcoal fire burning slowly in the chimney is obviously more appealing to the food of shabu shabu.

The bottom of the pot is not excellent, which does not mean that the quality of the lamb is not outstanding. In order to minimize the poor experience caused by the smell of mutton, the mutton selected by Yu Shabu Fang is 3 months old lamb, which has the advantage of lower smell compared with the common lambs close to 1 year old on the market. At this time, the mutton breed has little effect on the taste. There is only one kind of hand-cut mutton, that is, high-quality hand-cut fresh mutton, and the restaurant uses Yanchitan mutton hind leg meat, which basically has no fat. Good mutton needs to be cut thickly, and the jade shabu fang will cut it vertically and put it on a plate, standing on the plate without falling. After boiling for more than ten seconds, the tender hind leg meat is baked, and the sweetness and milk umami taste are appetizing. The Gold Medal Crispy Bone Meat is the New West Blue Lamb Lamb Chop and Crescent Meat, which is slightly chewy and crispy. Other meats also performed well, and there were basically no minefields. It is worth mentioning that the sesame sauce of Yushabu Fang has a very strong sesame and peanut fragrance, which is salty and light, which is worthy of recognition.

In addition to shabu-shabu, the stir-fried dishes of Jade Shabu also have good reviews. The fresh and spicy flavors such as stir-fried belly and stir-fried bezoar throat are comparable to those produced by Fujikyo Shabu, but sometimes the saltiness is too high.

The decoration of Jade Shabu Fang is a traditional Chinese ancient style, and the simplicity reveals a little simplicity. Even the private rooms are not unique and exquisite, only slightly preferable in privacy. The number of waiters is too small, and the meal time is obviously too busy.
